									Chinese Cabbage Salad

The best thing about this recipe is its versatility. The only ingredients mandatory are cabbage, crunchy
noodles, and the dressing. So make the whole shebang, or leave out all the other vegetables and
chicken.

General Ingredients:
      2 chicken breasts precooked and shredded
      1 pkt noodles (2 minute noodles – Asian, sesame, or chicken flavour)
      1 large handful toasted or roasted nuts (pine, peanuts, cashews)

Salad Ingredients:
      1 medium head cabbage shredded
      Orange or mandarin slices (if using canned drain and rinse)
      Capsicum (red, yellow, or green) thinly sliced
      Red onion thinly sliced
      Raw carrot julienned
      Celery julienned
      Cucumber julienned
      Coriander chopped

Dressing Ingredients:
      3 tbsp brown sugar
      3 tbsp vinegar (seasoned rice vinegar is best but white wine vinegar will work)
      ½ cup vegetable oil
      1 tbsp sesame oil
      Seasoning packet from noodles

Method:
      Combine dressing ingredients in jar. Shake well until mixed.
      Break crunchy noodles into small pieces and sauté in 3 tbsp butter (until golden brown). If nuts are
      not toasted, add nuts to pan also.
      Combine salad ingredients in large bowl.
      Add chicken on top.
      Top off with crunchy noodles and nuts.
      Drizzle generously with dressing.

Hints:
      Do not add noodles/nuts until just before serving, as they will go soggy.
      If saving left-over’s store noodles and nuts separately.
      If bringing salad to a potluck, serve the dressing, noodles, nuts, chicken separately for those with
      allergies or for vegetarians.
