Brandy Flan

					BRANDY FLAN

Flan is the name of a baked custard, as well as of a French pastry tart. The former is
considered to be a staple dessert in Spanish-speaking countries. This recipe is
enhanced by the addition of brandy.


Caramel:
½ cup sugar
3 tbsp water


Heat the sugar and water over medium-low heat, stirring occasionally, until golden
brown. Pour approximately 2 Tbsp into each of 6 custard cups.


Flan:
2 cups milk
1 tsp vanilla
1 tbsp brandy
½ cup sugar
3 whole eggs
2 egg yolks
¼ tsp nutmeg
1/8 tsp salt


Mix the milk, vanilla, and brandy together and warm. In a small bowl, mix the sugar,
eggs, egg yolks, nutmeg, and salt. When the milk mixture is warm, slowly and
carefully add it to the egg mixture. Strain to remove any solid egg particles that may
have formed. Pour into 6 caramel-lined custard cups, dividing mixture evenly. Place
the cups in a baking pan and fill the pan with hot water two-thirds of the way up the
sides of the custard cups. Bake in a preheated 350-degree oven for about 1 hour or
until a knife inserted in center comes out clean.
