Place rice in a medium saucepan and cover with 4 cups of water. Bring

2 cups brown rice Preheat the oven to 400° and line a baking sheet with parchment or foil.
3/4 lb firm tofu Toss the tofu cubes with 2 tbsp canola oil, 1 tbsp sesame oil, and half the

2 tbsp toasted sesame oil minced garlic. Make sure the cubes are well coated. Spread them in one
3 tbsp canola oil layer on the baking sheet and bake for about 15 minutes, or until they are

Salt to taste
While the tofu cubes are baking, heat the remaining oils in a large skillet
PER SERVING over medium-high heat. Add the rest of the garlic and the red pepper
flakes and let them sizzle for just a moment. Add the kale a handful at a
time. Turn it frequently with tongs. Once the kale turns bright green and
begins to wilt, about 2 to 3 minutes, turn off the heat. Mix the kale with
the tofu, tossing well. Salt to taste.
Serve over the brown rice.
