                  GARLICKY TOFU & GREENS
                                                                             Rice
                                                                             Place rice in a medium saucepan and cover with 4 cups of water. Bring

                                                                             While the tofu cubes are baking, heat the remaining oils in a large skillet

                                                                             flakes and let them sizzle for just a moment. Add the kale a handful at a
                                                                             time. Turn it frequently with tongs. Once the kale turns bright green and
                                                                             begins to wilt, about 2 to 3 minutes, turn off the heat. Mix the kale with
                                                                             the tofu, tossing well. Salt to taste.


                                                                             Serve over the brown rice.
