The History of Tokaji – Golden Ages

• In 1708, Rákóczi sent fifty barrels of Tokaji
wine to Peter the Great as well as the renowned
princes Golovkin and Mensikov. In the words of
Rákóczi’s envoy: “The tsar appreciated the fifty
barrels of wine very much”. On another
occasion the prince noted that the foreign
diplomats did not want for money, but Tokaji
wine inspired them more than freedom or
religion.

• Louis XIV of France received Tokaji as a gift
on several occasions. During a dinner where
Tokaji was served to the monarchs, he even
called Tokai aszú the wine of kings, the king of
wines.

The History of Tokaji - Remedies

                     • Tokaji was also a prescription medication
                     called Vinum Tokajenses Passum
prescribed to treat a number of ailments by
                     editions of the Hungarian Pharmacopoeia
                     published until 1936 .

                     • The healing properties of Tokaji wine had
been observed for a long time, and now
20th and 21st century medical science has
been able to prove them as well.

The History of Tokaji - Protection of
its Origins

             • 1737: During the reign of Charles III, a decree
stipulated the area in the country, whose produced wines
could be called Tokaji. This was the first time an
enclosed production area was created within the territory
of the Kingdom of Hungary. Harmonization of customary
law and the ability of the area to support more people
             were also important factors.

The term ASZÚ refers to the process that takes place on the shriveled berries in the bunch as
                    rot
the result of noble-rot (botrytis) and late harvest. Aszú wine is made from berries that have
                                                               noble-rot.

• The production of Aszú today is still based on centuries old traditions. With the help of a
              intensive
highly labour-intensive process, during harvest aszú berries are picked from the bunch one
by one, separately from healthy berries, then placed into tubs with holes on the bottom,
                                                        so-called Eszencia or Nectar.

• When producing aszú wines, subsequent quality is determined by the capacity of the “gönci
cask” and the “puttony” number. To produce a 3 puttonyos aszú, they add 136 litres of base
wine to 3 puttonys (3 X 25kg) of crushed aszú berries, then after multiple stirrings let it
macerate for 12-16 hours.

• The fermented aszú wine is then placed in barrels and maturated for many years in
Hegyalja cellars. The walls of the cellars are covered by a silky mould, Cladosporium
Cellare, which keeps humidity at a constant level, thereby helping the development of the
wines.
