VIGAN ROYAL BIBINGKA
ROYAL BIBINGKA RECIPE Ingredients (approximate) 1 (400 grams) glutinous rice 2 (150 gram) powdered coconut milk 1 can evaporated milk 1/2 cup water 6 whole eggs (beaten) 1/2 cup butter 2 cups sugar 1/2 cup cheddar cheese (grated) 1/4 cup butter (for coating on top of bibingka) Procedure Mix all ingredients (except grated cheese & extra butter) and place mixture in a shallow baking pan. Bake it at 350 degrees F for 15 minutes. Take it out of the oven, brush surface with butter and sprinkle grated cheddar cheese on top of the partially-baked bibingka. At this point in time, cover bibingka with aluminum foil so as not to burn surface prematurely. Put it back in the oven for another 20 minutes. Brush on remaining butter in between checks. Take it out from the oven and let it cool down. Slice it up and serve.
