Chef David Kinch of Los
We can expect some singular American
cooking from Kinch, whose restaurant
Manresa has garnered two Michelin stars.
Embracing the traditions of terroir in his
cooking, Kinch strives to express a "sense of
place" while drawing upon European
traditions. Kinch is known in Toronto foodie
circles as he participated in recent "Terroir"
symposiums. Look for more information and
dates in an upcoming newsletter and on the
School's website. .
Chef Paolo Lopriore Returns to SCS
from Il Canto, Sienna, Italy
Just outside of Siena is a 5 star
hotel originally built as
Carthusian convent in
1314. After the property was
purchased by current owner,
Anna Grossi Ricordati in 1969,
the complex was beautifully
restored by the eminent
architect Renzo Mongiardino.
Our 2010-11 Wine The Hotel Certosa di Maggiano
Sponsors is set in 4 hectares of parkland,
which includes vegetable
gardens and orchards, providing
many of the ingredients used in
Barrel Select the hotel's kitchen.
"Il Canto" restaurant is located in the ancient convent's kitchen and

still features the old wood burning oven and walled stoves. This is
the atelier of Paolo Lopriore, a talented young chef whose many
accolades include Gambero Rosso's prestigious "Three Forks".
Inspired by the abundance of seasonal ingredients produced in

Recent additions to the School Board of Directors include Susan
Carlyle, Susan Hahnelt and Dennis Nuhn. Susan Carlyle is senior
Brad Marsland & partner in a London law firm, Carlyle Peterson, and is long-time food
Kathy Wagner lover and cook. She and her husband live in London and are parents
to three sons. Susan Hahnelt is Senior Quality Manager with Agfa
HealthCare, a leading medical imaging and information management
Margaret & Lawrence company, providing software solutions for medical companies
Marsland worldwide. She and her husband live in Waterloo, love to travel and
experience local cuisines. Dennis Nuhn is a dental surgeon with an
established practice in Palmerston. Longtime residents of
Jim & Sandra Pitblado Listowel, Dennis and his wife now have a home in Stratford. They
love food, restaurants and cooking and are supportive of a wide range
of community organizations.

Membership at this level ($5,000 Gold. $2500 Silver) supports a fund
dedicated to longer-term vision and special projects of the Stratford
Chefs School. We proudly acknowledge the support of these
Examples of how Escoffier funds are used can be seen in the winter
months when a three-tiered modular classroom (designed by SCS
grad Jeff Aitchison '98) is installed into Rundles' dining room. With
clear sight lines, electronic hook-ups for lap tops, and projection
facilities, the learning environment has been upgraded to facilitate
better communication. The Escoffier Fund has also supported
purchase of a new database system for the School with technical
support provided by our IT supplier Blackcreek Technologies.
The 2011/12 Escoffier campaign will be underway by September
