【Abstract】:

   Cheese is one of the best dairy products featuring highest nutritional value and health care. With
the nice and varied taste, it is appreciated by many countries all over the world and plays an
important role in residents’ diet structure in developed dairy countries and developing countries.
To some extent, per capita consumption of cheese is a major standard for measuring one country’s
diet quality and level of its residents.

   In Europe, America and Oceania, the per capita consumption keeps at 20kg. Cheese not only is
one kind of nutriments, but also reflects a western culture. Practice has proved that western
catering culture promotes the consumption of western foods including cheese in East Asian
countries that lack of the tradition of eating dairy products. From the experiences of Japan and
Korean we learned that the development of economy and the openness of culture have played an
important role in accelerating the consumption of cheese. In recent years, the supply and demand,
the production and the import volume of cheese all were increasing with a growth rate of 20% and
in 2010, the market scale reached about 36,000 MT. Now, the existing markets are mainly located
in the large cities in coastal provinces and consumer group consists of three parts, they are
overseas returnees, foreign people and children and young consumers. To overseas returnees and
foreign people, cheese is their daily food for dietary needs, but the consumption is limited; to
children and young consumers, they accepted western fast food and cake in recent 3-5 years and
realized the existence of cheese and became the most potential consumers. Fast growing cheese
market is the mark that the group is mature gradually. In recent years, China held several
international activities, such as Beijing Olympic Games, Guangzhou Asian Games and Shanghai
World Expo, which attracted a large amount of foreign visitors and promoted the fast development
of cheese market. Generally speaking China’s cheese market is still at the beginning and growing
stage and the per capita consumption is less than 30g. From the fast growing of China’s economy
and increasingly frequent international exchanges we can see that there is a huge demand for
cheese consumption in Chinese market.
