with white fondant. Smooth with Fondant Smoother. Cut off excess with knife.
days.

Step 2
Mix moss green icing color with pastel green fondant. For dark pink fondant mix
white fondant with neon pink fondant. Dust silicone mold with cornstarch to
prevent sticking. Press fondant into molds and roll over with small fondant roller.
Use sharp knife greased with shortening to cut off excess fondant and remove from
mold. Brush back of fondant lightly with piping gel and attach to cake.

Step 3
For 12 in. cake, mold 10 1/2 pieces (74 in.) medium ribbon strips of dark pink
fondant for top and bottom border. In center of cake make 5 1/2 pieces (37 in.) of
large green fondant ribbon. In center of green ribbon add 5 1/2 pieces (27 in.) of
brown fondant small ribbon. Make 10 1/2 pieces (74 in.) of light pink fondant rick-
rack. Make one brown fondant bow; attach in center of ribbon with piping gel.
Step 4
For 8 in. cake, mold 7 1/2 pieces (30 in.) of green fondant small ribbon for top and
bottom border. Make assorted colors of buttons. 10 large button flowers, 6 small
button flowers, 10 large buttons and 8 small buttons; attach with piping gel.

* Covering Round Cakes With Rolled Fondant:
How do you cover a cake with fondant that's perfectly smooth, without wrinkles or
air bubbles? The flexibility of fondant is your secret weapon. Just follow our
instructions for the right ways to knead, roll out and lift the fondant, and you'll find
that covering a cake is easy.

Step 1
Prepare cake by lightly covering with buttercream icing.

Step 2

Before rolling out fondant, knead it until it is a workable consistency. If fondant is
sticky, knead in a little confectioners' sugar. Lightly dust your smooth work surface
or the Roll & Cut Mat and your rolling pin with confectioners' sugar to prevent
sticking. Roll out fondant sized to your cake. To keep fondant from sticking, lift
and move as you roll. Add more confectioners' sugar if needed.

Step 3

Gently lift fondant over rolling pin or slip cake circle under fondant to move;
position on cake.

                                           4

Step 4

Shape fondant to sides of cake with Easy-Glide Smoother. We recommend using
the Smoother because the pressure of your hands may leave impressions on the
fondant. Beginning in the middle of the cake top, move the Smoother outward and
down the sides to smooth and shape fondant to the cake and remove air bubbles. If
an air bubble appears, insert a pin on an angle, release air and smooth the area
again. Use the straight edge of the Smoother to mark fondant at the base of cake.
Trim off excess fondant using a spatula or sharp knife.

Step 5

Your cake is now ready to decorate.

Covering Large Rounds with Rolled Fondant

In most cases, the smaller your cake, the easier it will be to cover with rolled
fondant. However, there is an easy way to position and smooth fondant on cakes
that are 12 in. diameter or larger. Follow the steps below to lift fondant onto the
cake without tearing.

Step 1

Cover cake lightly with buttercream icing. Roll out fondant sized to your cake.

Step 2

Slide a large cake circle that has been dusted with confectioners' sugar under the
rolled fondant. Lift the circle and the fondant and position over cake. Gently shake
the circle to slide the fondant off the board and into position on the cake. Smooth
and trim as described above.

*Stacked Tiered Cake Construction:
Stacking is the most architectural method of tiered cake construction. Tiers are
placed directly on top of one another and pillars are not used. Cakes are supported
and stabilized by dowel rods and cake boards.

Step 1

Dowel rod all tiers except top tier.

                                         6

Step 2

Position the middle tier on the base tier, centering exactly.

**TIP: Finely shredded coconut or confectioner's sugar, placed in area where cake
circles or plastic plates will rest, helps prevent frosting on the cake from sticking.

Step 3

Repeat with the top tier.

                                           7

Step 4

To stabilize tiers further, sharpen one end of a wooden dowel rod and push it
through all tiers and cake boards to the base of the bottom tier.

Step 5

To decorate, start at the top and work down.
