Last Organic Outpost is a non profit organization committed to developing urban agriculture in the
greater Houston area. The fifth ward garden outpost is a demonstration project where we are
building a garden farm in the inner city. Joe Nelson Icet started the garden in November 2001 on an
abandoned piece of land in an industrial area near downtown. It's continued to expand with the help

The Last Organic Outpost was created to be a beautiful agricultural park in the inner city, to become

The Houston Farmers Market at Onion Creek on Saturday mornings was the first to open in
Houston. Dedicated to providing a meeting place where farmer could meet consumer, the market
has been a landmark in the Heights and the inspiration for the growth of markets around the
Houston area. In 2007, Rice University invited the Houston Farmers Market to move its second
location, a Tuesday afternoon market in Rice Village, to the more spacious and easily accessible

“The 360 Rickey was a subtle concoction."

A mixture of club soda, lime, lavender and 360 Vodka, it was billed as an eco-twist on a classic.
After all, the lavender sprig came from a Texas farm and the vodka was made from sustainable
grains.

"It's all based on stuff that's really fresh and local," said Robert Heugel, the Beaver's Ice House
bartender who invented it.

Every week, Heugel creates a new green drink for Beaver's new green happy hour, Wednesdays
from 5 to 10 p.m. People crowding the bar on a recent Wednesday couldn't get enough of the
eco-drink, which they sipped between conversations about sustainable architecture, organic food,
moms who blog and whatever else came to mind, green or not.

Beaver's takes it all a step further by offering a special green menu on Wednesday nights, with an
appetizer, a cocktail and an organic Belgian-style beer.

Because Beaver's is owned by chef Monica Pope — who's been educating Houston palates in local,
organic cuisine since she opened T'afia restaurant in 2004 — expect appetizers with an odd,
inventive bite. On the night of the 360 Rickey, the green menu featured a spicy salad with spinach,
watermelon, jalapeños, blue cheese, house-smoked hormone-free chicken and homemade
pancetta.

Each week, some proceeds from the green menu go to a local group working to make Houston a
more sustainable city. In the coming weeks, these groups will include the Buffalo Bayou Partnership,
Build Clean and Mothers for Clean Air.”

The restaurant happens to be among the most eco-friendly places in all of Houston. Not only is The
Grove home to its very own second floor herb and tomato garden, but it also uses eco-friendly
materials made from corn, sugarcane or coconut fiber; recycles all paper, cans, plastics, glass and
cardboard within its walls; and sustains a compost pile from the unused produce on land near the
park; and only utilizes compostable trash and kitchen bags.


The restaurant is located on the 12-acre park development downtown called Discovery Green. The
park space features a large lake, interactive fountains, outdoor stages, art pieces and frequent
