Halibut with a Wasabi Pea Crust Serves 4 2 lbs halibut ½ cup mayonnaise 1 t Sriracha (or hot sauce) – use less for milder taste 2 T honey 2 drops of sesame oil ½ cup roughly chopped wasabi peas Preheat oven to 400 degrees. Place four halibut pieces on a parchment covered baking sheet. Mix together the mayo, Sriracha, honey and sesame oil. Taste for spiciness (this combination is quite spicy, start with less Sriracha if you prefer it milder). Spread mixture on to the halibut pieces. Next, press the chopped peas onto the halibut and mayo mix. Heat for anywhere between 10-‐20 minutes. A good rule is for each inch of thickness of halibut, cook for 8 minutes, until the fish is flaky and peas start to brown.
