                           The Big Cook – About the Authors


T    he Big Cook began in 1997, right when our families were expanding at a dramatic rate and cooking began
     to become a real challenge. Providing healthy, homemade meals became hard to do as the busy-ness of
life began to take over. The three of us got together and decided to “cook en masse” creating many meals at
the same time to be used on future days. The idea took off and we all came to rely on these meals throughout
our hectic schedules on those days ending in the letter “y”. Even having guests over for a wonderful meal
became easier when the tasty main course was ready to be cooked.
  The Big Cook has truly changed our lives when it comes to supper preparation! Between the three of us
there are 11 children – 10 boys and 1 girl. Our households are full of activities; sports, music, church, etc. We
can’t fully express the satisfaction of going to our freezers and having a choice of great meals available at our
fingertips! We have now been doing The Big Cook for 10 years and will never go back to the old method of
meal preparation!




                          Joanne Smith
                           • Joanne received her Bachelor of Science in Home Ec. with a major in Nutrition
                           from the University of Saskatchewan in 1988. She then went back to school in 1990
                           to specialize in Community Nutrition. After completing 1 of only 4 Community
                           Nutrition Internships in Canada Joanne began her Nutrition career as a Public
                           Health Nutritionist in Saskatchewan. She went on to work with low income groups
                           in Saskatoon’s inner city as well as teen mom’s. After moving to Medicine Hat
                           in 1994 she changed focus, working at the local hospital as a Clinical Dietitian.
                           Her love of nutrition education and prevention, however, brought her back to
                           Community Nutrition. She again focused on low income groups establishing a
                           Collective Cooking group, a Food Fundamentals class and worked with pregnant
or breast feeding women. She then moved into a government funded position looking into causes and
solutions to the growing childhood obesity trend. Joanne is married and has four boys between the ages of
eight and thirteen. They keep her busy running to various sports activities and music lessons so she decided
to put her nutrition career somewhat on hold to better meet the demands of family life. She discovered a
great way to be at home yet still fulfill her love of nutrition education by writing a weekly Food Column for
the local newspaper which she has done since 1998. She also taught part time at the Community College and
takes on other nutrition related contracts in the community. Nutrition for low income groups still remains
a key interest hence her position on the Board of “Community Food Connection”, a local food security
organization. Outside of the nutrition field she Chairs the Board of the private school where her children
attend and also runs a weekly ‘healthy hot lunch program’ at the school. In her ‘spare time’ she enjoys music,
reading, exercising and especially spending time with her family camping, traveling and just being together.
Her passion for educating others about nutrition, and enabling them with the knowledge and means to
attain a healthy lifestyle has resulted in numerous speaking engagements. Joanne enjoys developing and
enhancing recipes as is evident in this book. She is anxious to share this life changing method with all those
busy individuals like herself.

                          Deanna Siemens
                        • Deanna received her Bachelor of Science in Nursing from the University of
                        Alberta in 1988. She is married and has three children between the ages of twelve
                        and fifteen. Although she no longer works as a nurse, she now finds herself busy
                        with bookkeeping tasks, home schooling and running her children between their
                        numerous music lessons and sporting events. Deanna particularly loves the Big
                        Cook on those nights when she arrives home at 6 p.m. and has to be out the door
                        to a meeting or sports event by 7 p.m. “The meals also come in handy when we go
                        camping or to the cabin. I don’t have to pack a truckload of ingredients – I just grab
                        a variety of ready to cook meals from my freezer. The Big Cook meals also allow me
                        to spend more time boating or skiing because I don’t need to be come in early to
cut and chop”. As a problem solver she helped develop a solution to the ever-present question of “what’s
for supper?” The Big Cook has taken the work out of planning suppers and given her the freedom to spend
more time enjoying the outdoors and her family.




                          Lorelei Thomas
                            • Lorelei received her Bachelor of Education Degree from The University of
                            Lethbridge, Alberta, Canada in 1988. She began her teaching career immediately
                            after this and received the Edwin Parr Award for First Year Teacher of the Year for
                            Alberta in 1989. Since then she has been teaching at Medicine Hat High School,
                            Medicine Hat, Alberta where she currently teaches grades 9 – 12 Math and grade 9
                            Food Studies. Lorelei received her Master of Education degree in 1997 also from The
                            University of Lethbridge. She does the bookkeeping and financial management
                            for her husband’s business as well on a daily basis; her organizational skills are
                            truly impeccable. Keeping organized is crucial to allow success and balance in all
                            aspects of her busy life. Lorelei is married and has four boys between the ages of six
and fifteen. Although her boys participate in hockey, school sports and music lessons, Lorelei still finds time
to travel, participate in sports and spend time with her extended family. Lorelei’s drive and contributions to
this concept and book were invaluable as she shared her infinite talents, endless energy and commitment to
the completion of this book. The Big Cook has allowed the organization of meals to ensure her family eats
well even when a busy day inevitably occurs. She has grown to value these meals as her family matures and
activities fill in the gaps. “I can’t tell you how much I value my Big Cook meals when I’m out the door to
school at 8:00 a.m. and I already know that I’ve put a nutritious, delicious meal in the slow cooker that will be

  People in their community started to hear about their solution and kept asking how they did it and if they
could have copies of their time and kid tested recipes. So many people asked they finally decided to put their
method and recipes into a book. Deanna states,“This book was written with the hope of helping others solve
their dinner dilemma just as it has helped us.”
 Joanne is a Registered Dietitian, Lorelei has her Masters in Education and teaches High School Math and
Deanna has her degree in Nursing. With 11 children between them in every activity you can imagine it was
not easy to find the time to climb the steep learning curve of creating a cookbook.
  For 3 years they worked on this book in their ‘spare time’ and in the spring of 2006 The Big Cook rolled off
the presses. The book is designed just the way they want a cookbook to be. It is hard cover, lies flat when
opened, has pages that can be wiped off and mouth-watering color photos of each of the 73 beef, chicken and
pork recipes included in the book.
  One of the key components to this cooking concept is having fun with friends. It is just so much more fun
to cook with a group of friends then on your own. Lorelei knows how well it works and says, “Once you’ve
tried this cooking concept you will never be able to go back to daily meal preparations again!”
   This makes The Big Cook an ideal option for everyone including people or couples who don’t always feel
like cooking for just one or two. You spend a day with friends and can make up meals that feed just 1 or 2.
It’s also great for parents of College age children to send along with them to cut meal costs and ensure they
are eating right. The same concept applies to those with elderly parents still living on their own. Individual
meals can me made up for them giving peace of mind to their children that they are eating more then ‘tea

1. Why did you write The Big Cook?
  For the past 10 years the 3 of us would get together 3 – 4 times per year and in one day prepare over 200
meals to be used by us over the next few months. Our food costs decreased, family mealtime together
thrived, home-cooked healthy meals increased and there was much less eating out on the run. Supper
stress was gone and others saw the benefits of this. So many people asked us to pass along our recipes and
teach them how to do The Big Cook that we decided to write a cookbook. We realized this method had the
potential to help many people just as it has helped us. Our main goal has always been to help others achieve
the same results that we have seen in our own lives. We are living proof that The Big Cook works. It is supper
survival.


2. How is The Big Cook different from other cookbooks?
   Other cookbooks give you the ingredients for one meal; The Big Cook gives you the quantities for either 1,
4, 6 or 8 meals of each recipe. The multiplying and conversions have already been done! The cook just needs
to choose the column that indicates the number of meals he/she wants to make and then follow that column.
The meals are then separated into individually sealed zipper bags and frozen for future use. Each meal feeds
4 – 6 people so they are a substantial size. As well, The Big Cook’s recipes are compiled from three family’s
favorites; each is delicious!


3. What types of recipes are included?
  There are 73 beef, chicken and pork recipes. Most are main courses with a few being casseroles. With the
main course recipes one only has to prepare a potato, rice or pasta along with a vegetable or salad and the
meal is complete! The meals are labeled as slow cooker, oven, stir fry and/or barbeque to assist with options
for cooking.


4. How can you make 200+ meals in a day?
  It’s actually very easy! We get 4 people together and each person makes 8
recipes in one day. Because each person is making 8 of each recipe he/she
actually makes 64 meals in one day. So for 4 people that is 256 meals in one
day! At the end of the day the meals are divided up and each person takes
2 meals of each recipe. In this way, each individual goes home with 50 – 60+
meals (and remember that each meal feeds 4 to 6 people). Suppers for the
next 3 – 4 months are now planned for and waiting in the freezer. They only
need to be cooked. However, when people start doing The Big Cook we advise them to start with 4 recipes
per individual so that they won’t be overwhelmed their first time. Even 4 recipes per individual sends them
home with 32 meals each for that day! And remember that you only have 2 of each recipe so the variety is
tremendous! It doesn’t take long, however, until the individuals feel comfortable making more meals and
expanding The Big Cook.


5. Who can benefit from The Big Cook?
  We have a solution that can work for everyone! Regardless of one’s age, activity level and situation we have
found that most, if not all, individuals experience some stress when it comes to preparing meals on a daily
basis. Single people can get together, make the meals and freeze them in smaller portions. For instance, in

the 1 meal column the single person may actually freeze that meal into 4 individual portions. Imagine the
number of meals that the single person would come home with plus it is so much more fun to cook with a
friend! A couple, whether young or old, can work with another couple and freeze each meal into 2 portions.
The serving size can be adjusted by the cooks. We have found that the meals feed 4 – 6 people nicely so a
typical family with children would freeze each recipe as one meal for their family. Individuals with college
and university bound students can do The Big Cook and send their students off with a multitude of healthy
meals ready in their freezer. Adults can do The Big Cook for their elderly parents to ensure that they are
eating healthy with very little work. The possibilities for each age group is limitless!


6. Can these recipes be used by people with Allergies or Intolerances such as to milk or gluten?
  Absolutely! For people who have problems with milk products they can simply leave out the milk or cheese
in almost every recipe. There are only a few recipes in which milk products are a key ingredient.
   For people with Celiac disease or problems digesting gluten there are a few recipes that would need to
be slightly modified. Flour is used in some recipes as a thickening agent and this can be substituted with a
gluten free thickener or just left out. Also, some of the recipes call for soup or spices that may contain gluten.
These too can be substituted with gluten free products. The resulting recipes with these substitutions will
still be delicious.


7. This book proposes to solve a number of life’s dilemmas. How can this be a supper solution?
  Everyone knows the stressful feeling experienced almost on a daily basis when you get up in the morning
and think, “What are we going to have for supper”? The Big Cook addresses many common problems and
provides some very specific benefits:
  • Preparing meals ahead of time ensures that the ingredients are already in the meal – no
    more running to the grocery store for the missing ingredients!
  • The Big Cook provides homemade healthy, nutritious meals with known ingredients as
    compared to eating out more often with larger portions and possibly higher than normal
    fat and sodium content.
  • The meals in The Big Cook average out to $8 per meal for 4 – 6 people or less than $2 per
    person as compared to between $8 and $25 per person for the average meal cost in a
    restaurant.
  • With The Big Cook your daily supper preparation stress is gone! Because you prepared
    enough meals in one day to last for months, you only need to choose a prepared meal from your freezer
    and cook it. The work and mess are already done! We often use the slow cooker to free up even more
    time before supper!

8. Can just one person use this book?
  Absolutely! The meals typically feed 4 – 6 people so a single person could use the 1 meal column in the
recipe and freeze it in 4 individual portions.

9. Do children like the recipes?
  We have 11 children between us and each recipe has been tested and eaten by them
many times! The recipes are definitely tried, tested and kid approved – not just by one but
by three different families!


10. Are the ingredients hard to find?
  We created the recipes for the typical family with common ingredients everyone is likely to have on hand.
The ingredients are not exotic. They are wonderful combinations of readily available foods Take a look at any
recipe and you will recognize the ingredients and know where to find them.


11. Are the meals healthy?
  Joanne Smith, co-author, is a Registered Dietitian and has worked with each recipe in an attempt to keep
the fat, cholesterol and sodium content at a healthy level. The recipes are also developed with the hope
of increasing families nutrient intake. The meals have high protein, low fat meat sources accompanied by
nutrient rich fruits, vegetables and milk products. Fibre, vitamins, minerals, protein, carbohydrates – they’re
all there! These are meals with maximum nutritional value but no compromise on taste! Knowing what is
in the food you are eating is crucial and by making your own home-cooked meals you can do just that. For

12. How do you store these meals?
  We found that storing the meals in zipper bags works the best. Plastic containers
work well too but finding room in one’s freezer for 50 – 60 of them may be a challenge.
The zipper bags allow one to store the meals in the least amount of space necessary.
The zipper bags also keep the meals fresh because they are totally sealed. Having
a freezer to store the meals in is essential. Only make as many meals as you have
room to freeze them in! We have upright freezers that allow us to organize our
meals into beef, chicken and pork shelves. A chest freezer can also be used; you
may want to separate the meals with cardboard layers so the meals do not all freeze
together because that makes them hard to get out. The meals will stay fresh in your chest freezer for at
least 6 months and up to one year. Opening a freezer and seeing 50 – 60 meals in there is truly a satisfying
moment!


13. Do you have a website?

14. When and how did The Big Cook start?
  Over 10 years ago the three of us were at a time in our lives when our families were “expanding” and life
was getting truly busier. Making a supper meal each night began to become a chore (and that’s when we

could think of what to make for supper). We got together and began to make multiples of each recipe and
share them amongst ourselves. We each brought recipes that were favorites in our family and shared them
with the others. It evolved from there to become something we all came to rely on and we still continue to
do The Big Cook 3 – 4 times per year. We have gradually worked the big cook up to doing over 250 meals in
one day with 4 people working on it. Opening one’s freezer and seeing 50 – 60 meals waiting to be cooked
and eaten definitely has its benefits! The Big Cook is definitely ingrained in our lives now; we could never go
back to the preparing meals one-by-one on a daily basis again!

media coverage through TV, radio, magazines and newspapers.


17. You have decided to donate a portion of your profits to charity. Can you tell us about this?
  This is one of the points that we are most excited about! We have decided to donate a dollar from the sale
of each book equally to either World Compassion or Food for the Hungry. World Compassion will use the
money to build homes for widows in Afghanistan that are desperately needed; Food For the Hungry will
create clean water projects which will then supply villages in the third world with safe drinking water.
