The Organisation
Fifteen is a commercial business with a purpose – a global social enterprise with young people
at its heart. Fifteen has three restaurants worldwide; Amsterdam, Cornwall and London. Each
restaurant operates a pioneering Apprentice Programme for young people between the ages of
18 and 24 alongside the day-to-day running of the restaurants. There are two distinct floors
at Fifteen London. The Trattoria on the ground floor is open all day and serves great value
food in a rustic, relaxed, Italian style. The Dining Room on the lower floor has great retro
styling and an open kitchen serving simply prepared modern Mediterranean food with an
Italian influence.
The Job
The main purpose of this job is to lead the teams shift by shift in the Trattoria and the Dining
Room by example, ensuring that customers experience a distinctive, friendly and
knowledgeable team that complements their excellent food with amazing service, all delivered
the Fifteen way. In addition, you’ll be responsible for recruiting, training, leading, motivating
and rewarding the Reception & Reservations team while working with the management team
to promote Fifteen and drive sales across both restaurants. A key aspect is also to maintain a
supportive work environment for our Apprentices.
The Person
The right person for this role will have proven leadership experience in other high-end, front of
house environments. They will have the ability to lead and motivate their team in a supportive
manner. It goes without saying that whoever gets this role will be passionate about great food
and amazing service and will have a character that inspires dedication, hard work and
positivity from their team. Experience of training and developing teams in areas such as food
knowledge, health and safety, commerciality and service excellence is important, as is the
ability to be well organised, proactive and calm under pressure. You’ll be taking responsibility
for running your part of Fifteen, which means you’ll need to prove that you can solve problems
and take responsibility for dealing with unforeseen situations the Fifteen way.
The Detail
The main areas of accountability for this job are:
To demonstrate your genuine belief and pride in the work of Fifteen and to inspire others
around you to feel the same way.
To lead and motivate your front of house team in a smiley and positive way, treating them
with the utmost respect and inspiring them to provide amazing customer service in a
knowledgable, friendly, enthusiastic manner in order that they’re able to help meet the
sales targets set for the restaurant.
To ensure your team are well briefed in a positive and motivational way before each shift
with regard to what’s happening in the business, what’s going to happen on that shift and
what’s expected of them in general.
To control costs within your sphere of influence to ensure that the restaurant is a profitable
as possible. Examples of this would be managing labour costs effectively, managing the
ordering, stock levels and costs of tableware for your restaurant and keeping a control on
voiding, correcting and changing of bills.
To manage the performance of your team in a positive way, rewarding them for their hard
work and efforts and helping them to achieve their potential while addressing any issues
with their day to day performance swiftly and personably.
To devise and issue rotas for the team which help the business meet it’s targets as well as
ensuring the right levels of service for guests, all the while ensuring that staff get them in
good time to help them plan their lives outside of work. Part of this will naturally be the
management and allocation of holiday requests in a fair way that ensures adequate cover is
always provided.
To be responsible for identifying the need to recruit new members of the team and to
ensure that you find excellent people to fill those needs working with our recruitment
partners and our People & Development team.
To train and continuously develop your team in a variety of ways to ensure they all
understand and exceed Fifteen’s service standards, as well as understanding all their
responsibilities with regard to processes and procedures, such as cash handling, health and
safety and food hygiene.
To work with the Head of Restaurant and the Marketing & Commercial Manager to drive
sales at Fifteen, including working on maximising covers and devising and implementing
ways of encouraging an increased spend per head.
To work with the Reception & Reservations team to ensure that their reservation systems
are working as effectively as possible and that the team are well trained in using them.
To communicate with, and work closely with the managers of all the other departments at
Fifteen to ensure that the operation runs really smoothly and that everyone understands
what’s going on across the business.
To ensure that opening and closing procedures are understood by all involved and carried
out to the highest possible standard at all times.
To handle external correspondence about Reservations and Receptions, communicating
positive feedback to the team as well as handling issues and complaints raised by guests
and ensuring that any serious or reoccurring issues are brought to the attention of the Head
of Restaurant.
To produce daily reports and statistics from each shift to keep the management team up to
date with what’s happening on the floor.
To ensure that health and safety legislation is being adhered to throughout the restaurant,
making sure that all paperwork is up to date and that your team are well trained in terms of
safe working practices and what’s expected of them.
To maintain the highest disciplines in attendance and timekeeping and implement the
absence management procedure as defined by the People & Development team.
To comply with all company policies and standards which are fundamental in maintaining
effective performance, communication and good business reputation.
To comply with all Food Hygiene and Fire, Health & Safety regulations, attending any
training as required by the Company and adhering to all company policies and legislative
requirements
