The Baumard family is one of the loire Valley’s loyal servants of Chenin
Blanc, along with Foreau and Huët and Nicholas Joly at Coulée de
Serrant. The family has been in the loire since the early part of the
17th century and they now guard some of the most sacred parcels of
Chenin: the great Clos du Papillon in Savennièrres as well as precious
vines in the Coteaux du layon and Quarts de Chaume. While the 2001
Clos du Papillon is very dry, the “Clos de St. Catherine” is Chenin
Blanc at its sweetest with notes of white flowers, honey and tea. This
is a haunting dessert wine that will easily age for a decade or more
in the cellar, though don’t hesitate to open a few for the holidays.

    Burgundy
     naked Chardonnay!
it’s cold up in Chablis. The Chardonnay shivers through the summer, producing wines of
incredible purity – naked live wires of lemon-lime and mineral. over the last decade, didier
Séguier has brought William Fèvre back to the pinnacle of Chablis. if Raveneau and dauvissat
breed thundering Chablis that reward years in the cellar, Fèvre’s are more filigreed and
approachable. These are cymbal-crashing Chablis with flawless balance and they represent
some of the wildest values in white Burgundy. A note on the wines: The Bougros “Côte de
Bouguerots” is sourced from a steep, special 2-hectare parcel at the base of the vineyard; it
tends to be leaner and more mineral. The Fourchaume “Vignoble de Vaulorent” is selected
from the best parcel of the vineyard, directly abutting the Grand Cru Preuses. it is considered
     a “baby Grand Cru.”

“all I could do was shake my head in admiration when I left
the cellars of Guillaume d’Angerville.” Allen Meadows, Burghound
yes, the 2005 collection is nothing short of inspiring – but this greatness shouldn’t overwhelm the fact that the
Marquis d’Angerville is a legendary estate. it was one of the first estates, along with Henri Gouges and Armand
Rousseau, to bottle their own wines and they remain one of the greatest estates in the Côte d’or. While their
monopole Clos des ducs is the gem of the property, all of d’Angerville’s Volnays have the reputation of being very
cellarworthy. Burghound doesn’t believe the 1985 Champans will reach its
peak till 2015 – some 30 years post vintage!

    Champagne
    America is taking notice of
                             the “other” Dom.
With one of the smallest productions of any of the luxury cuvées and only recently
reintroduced to the u.S. market in 2005, dom Ruinart has been a well-kept secret here
in the States, even though it has graced Europe’s finest wine lists for decades. As it
turns out, dom Pérignon and dom Thierry Ruinart were good old friends back in the day.
legend has it that whatever dom Ruinart learned from his famous friend he passed on
to his nephew Nicolas Ruinart who later founded the house of Ruinart. There remains, to
this day, a stylistic similarity between the two houses.
The 1996 dom Ruinart is one of the greatest bottlings in a very distinguished lineage
    – consider that the 1979 dom Ruinart was judged “second-best Blanc de Blancs ever
made in the world” at the Millennium tasting held in Sweden in 1999 with Richard Juhlin
and other Champagne elites. The 1996 is a broad and incredibly lavish Champagne
with layers and layers of opulent fruit and darker, richer notes of hazelnut, chocolate
cream and nutmeg all held within a surprisingly muscular frame. The balance is simply
impeccable and the wine possesses a broad spine combined with a suaveness that
makes it all seem effortless. over time, this dom Ruinart will reveal a complex
minerality – Raveneau with bubbles! With no vintages of comparable stature on the
horizon until 2002 (the top cuvées will not be released until 2012 or later), it’s time to
stock-pile the best wines of this century-closing vintage.

     Piedmont
                        is there a more traditional,
                                          more brooding, more ferocious Barolo?
Giacomo Conterno farms about 6 hectares (just over 14 acres)
of Cascina Francia, his monopole site outside of the village of
Serralunga d’Alba in the Barolo doC. This village (also home to
traditionalist Theobaldo Cappellano) is known for its dense,
textured Nebbiolos. When young, they are taut, grainy and jagged –
rough, curled up balls of concentration. With age (and one can
speak in decades with Conterno, not just years), they unravel to
reveal an immensity and complexity that is simply unrivaled.
Elegant? yes, but an elegance without discipline, without rules –
expansive and uncompromising. Contero’s Barolo “Monfortino”
is his masterpiece, shaped only in the greatest years, from the
greatest fruit. Monfortino is unquestionably Piedmont royalty.

     Kafka said: Things only have
                 a meaning because they end.
At Sine Qua Non, Manfred and Elaine Krankel’s avant-garde winemaking adventure, this
truism is honored. The same wine is never, ever, repeated. The modus operandi is simple:
Every year find the most exceptional fruit and shape it into wines of tectonic force.
The signature of a Sine Qua Non is always massive; this is oozing juice of flamboyant
American proportions and complexity that somehow maintains a rippling energy, a lift
that gives it tension and purpose. yes, it’s a polarizing style of winemaking, but whether
you delight or shun the outcome, one fact is inarguable: These are wines of outstanding
quality. Quantities are *extremely limited* so please act immediately if you or someone
you love deserves the ultimate gift from California.

     Scholium Project: fall field trip
When i arrived that first morning at the new Scholium Project
winery, in Suisun Valley, California, the wind was strong and the
low sun shone through the vineyard and barrels toward the bright
red metal barn. This was the beginning of a two-week internship
at Abe Schoener’s Scholium Project. i wasn’t sure what i was
getting myself into – i was, after all, working during my vacation.
in the year and a half that i’ve worked at Crush, Scholium Project’s
wines have become some of my favorites. So, following the spirit
of the Project, i worked, and i learned. The very small crew (only
one full-time worker) allowed me to participate in every step of the
winemaking. What could have been an intimidating experience was
also simplified by Abe’s approachable nature. With every mistake,
a lesson learned and a shrug of his shoulders. “Well, now we
know,” i can still hear Abe saying. Contemplate the action, make
revisions if necessary, but never be afraid to try something new.
it’s the learning process that is principal and what emerges is all
the deeper, stronger and better for the journey. Maybe you can say
the same about me. -Molly Sider

a shot of Kentucky in New York State
in the tiny town of Gardiner, nestled deep in New york’s picturesque Hudson Valley, the Tuthilltown
Spirits distillery has captured the attention of the whiskey world. Tuthilltown is the first and only
distillery to produce whiskey in New york State since Prohibition, but their production is anything but
modern. They use grain grown on Hudson Valley farms, making all of their whiskey by hand in one
building. They even bottle and label their finished products by hand, and each bottle is hand-numbered
with batch, year, and bottle number. This attention to detail shows in the whiskey, too, as their final
product is at once classic and entirely unique.

Baby Bourbon (375ml) Holiday Price: $41.95
The first Bourbon produced in New York State is called “Baby” because it only sees a few months of age in 3-gallon oak micro-
casks. This vibrant whiskey retains the creamy sweetness of fresh corn smoothed out by a touch of vanilla and caramel.

Old Gristmill Corn Whiskey (375ml) Holiday Price: $19.95
Made from 100% local corn – moonshine with a whole lot of refinement! This whiskey in unaged, meaning it’s crystal-clear in
the bottle, but don’t mistake it for vodka. Its sweet attack and fiery finish remind you that this is most certainly whiskey. Enjoy
it served neat, or as a base for a new twist on whiskey cocktails.

Manhattan Rye Whiskey (375ml) Holiday Price: $41.95
Before Prohibition, hundreds of distilleries made rye whiskey in New York. This bottling is an appropriate homage to those
long-gone producers - small batches, single malt, and miniscule production. Tuthilltown’s Manhattan Rye is slightly floral on
the nose and has a pronounced peppery, spicy finish, and practically begs to be put in a cocktail glass with some good bitters
     and vermouth.

     Four-Grain Bourbon (375ml) Holiday Price: $41.95
A blended whiskey made from corn, rye, wheat, and malted barley, this is Tuthilltown’s most complex drink. The sweet nose
will remind you of the corn whiskey, and the spiciness comes from the rye, but the wheat and barley combine to make this
bourbon richer and fuller than its single-grain counterparts. Like the Baby Bourbon, the Four-Grain is aged for a short period of KENTUCKY, IN NEW YORK: Hand-made
time in tiny barrels. artisanal whiskey. Intense, unique and
                                                                                                                                                New York proud.

      a magnum of perfection
Cognac Tesseron was founded by Abel Tesseron in the 19th century and it is
now run by his grandson Alfred, who also happens to own the prestigious
Château Pontet-Canet. The Lot N. 53 XO Perfection is a blend of the house’s
most sublime stocks of Grande Champagne Cognac. Spending more than
two generations in Limousin oak casks, the Cognac has a brilliant
mahogany color and a deep bouquet of plums, figs and tobacco.
The magnum represents a rare collector’s treasure.
