									      Loaded Potato Salad Bites
                                              Makes aprox 50-60 bites

                                       5 lbs small red potatoes {aprox 50}
                                                1-cup sour cream
                                            ½ cup non-fat greek yogurt
                               2-cups shredded cheddar cheese + extra for garnish
                                 1 package of bacon {cooked & roughly chopped}
                                              ½ cup celery, chopped
                                  ½ cup green onions, chopped + extra for garish
                                             ¼ cup white wine vinegar
                                                     1 tbsp salt
                                                   1 tbsp pepper

 Boil potatoes until they are fork tender, but skins still in tact. Drain potatoes from water and let cool in a single
 layer on sheet pan. Once potatoes are cool, slice in half length ways. Using a melon baller remove the inside of
the potato to create a boat. {Do not remove all, leave a little to make a wall} Place the insides of the potatos into
a bowl and mix with the remaining ingredients. Refrigerate until ready to serve. {Can be make up to 24 hours in
                          advance} Garnish with extra chopped green onions and cheddar.
