                                                                ur perspective
                                                                on life tends to
                                                                wax and wane
                                                                depending on
                                                                the seasons,
                                                                and the events
                                                                that unfurl in
                                                                our lives – when
                                                                Summer tails off,
                                                                Autumn prompts
                         Winter and the days get shorter and shorter, we
                         instinctively withdraw and reflect... And as with
                         our perspective, so does our vulnerability. Far and
                         beyond such seasonal habits, the devastating
                         earthquakes in Christchurch have dropped us
                         like a lead weight into a darkness we didn’t see
                         coming, and will have compelled many of us to
                         take stock of our lives and the people we share
                         them with to an extent we don’t normally ask
                         of ourselves. If there is one positive thing that
                         comes to the fore in situations as dire as these,
                         it is that in amidst the loss, the distress, the shock
                         and the disbelief, our differences evaporate
                         and we naturally rally together to help, comfort
                         and support one another. Being united by a
                         universal purpose is a powerful thing and if our
                         innate moral values continue to transcend our
                         (often superficial) boundaries in times of peace
                         and stability, there would appear to be a silver
                         lining. Our thoughts and prayers continue for the
                         survivors, the victims and their families during this
                         extremely difficult time.

  YELLOWFIN TUNA,
  SWEET CORN, SQUID
  INK MAYO, CALAMARI,

  Serves 4


  FOR THE TUNA
  250 g yellowfin tuna
  Salt to season
  Olive oil for frying the tuna
  Method: Portion the tuna into 4 even sizes. Set aside until ready to serve.

  FOR THE CALAMARI
  4 x large squid tubes
  Salt to season
  Olive oil for frying
  Method: Score the calamari (crisscross) with a sharp knife. Set aside until
  ready to serve.

  FOR THE SWEET CORN
  3 x sweet corn
  150 ml x vegetable stock
  Method: Halve one sweet corn and blanch each piece for 5 minutes.
  Refresh in ice water. Take the corn off the cob for garnish. Use the
  remaining 2 corn to make a purée by cooking it with the vegetable stock.
  Simmer for about half an hour (or until the corn is soft) on a medium heat.
  Strain the stock and blend in a high speed blender until a smooth puree is
  achieved. Pass with a fine strainer and set aside.

  FOR THE SQUID INK MAYONNAISE
  100 g Japanese mayonnaise
  2 g squid ink
  Method: Mix the mayonnaise and squid ink until well-combined.

  FOR THE LEMON GEL
  2 x lemons
  150 ml water
  75 g sugar
  2.5 g agar

  Method: Bring the water and sugar to the boil. Add the juice of the lemons.
  Whisk in the agar. Bring the mix back to the boil. Strain then transfer to a
  plastic container and refrigerate until set as firm as a jelly. Once the lemon
  gel is set, transfer to a food processor and blitz to a smooth purée-like
  consistency. If the purée is too thick, a little water can be added.

  ASSEMBLING THE DISH
  Using two hot pans, seal the tuna and calamari separately. Seal the tuna
  on one side only and the calamari only until it curls. Place on a kitchen
  towel and season. Place the sweet corn purée around the plate. Place
  the tuna and calamari around the purée. Spoon on a few dots of the
  mayonnaise. Thinly slice the red radish and place close to the tuna. Place
  the sweet corn kernels alongside the calamari. Finish the plate with a
  couple of teaspoons of lemon gel on top of the tuna and on the plate.
