COLOSSAL COOKIE Ingredients: 1½ cups flour ¾ tsp. baking soda ½ tsp. salt ½ cup butter or margarine (1 cube) ¾ cup packed brown sugar 3 Tbsp. Granulated sugar 1 egg ½ tsp. vanilla ½ cup chocolate chips (6 oz. = 1 cup) Directions: Preheat oven to 325* 1. In a small bowl, mix sifted flour, baking soda and salt. Set aside. 2. In a large mixing bowl, beat at medium speed butter, brown sugar, granulated sugar, egg and vanilla until well blended. 3. At low speed, gradually beat in flour mixture until well blended. 4. Stir in chocolate chips. 5. Wrap dough in plastic wrap and place in refrigerator for 1 ½ hours or in freezer for 45 minutes or until well chilled, but not hard. (chilling makes dough less sticky and prevents excessive spreading during baking) 6. Place dough in center of a 12” round baking pan (pizza pan). 7. Press evenly to within 1” of edge of pan. 8. Bake in center of preheated oven at 325* for 20-25 minutes. Cookie is done when golden brown. 9. Place baking pan on a wire rack and cool cookies completely after taking out of oven. 10.When cool, cut cookie with butter knife and place on paper towel, wash dishes before eating.
