Oriental Mackerel Fillets 455g (1lb) mackerel fillets, fresh or defrosted Marinade 4 x 15ml spoon (4 tablespoons) fresh orange juice 2 x 15ml spoon (2 tablespoons) soy sauce 2 x 15ml spoon (2 tablespoons) fresh chopped parsley juice and rind of half a lemon 1 clove garlic, crushed 1 x 5ml spoon (1 teaspoon) Garam Masala Preheat the grill Place the mackerel fillets into a shallow dish. Mix the marinade ingredients together and pour over the fish. Cover and marinate for 20 minutes. Cook the fillets on a lightly greased grill pan for 4-5 minutes, basting with any remaining marinade.
