									Pistachio Chocolate Mousse

Ricotta cheese—in this version of a light mousse—makes a delicious and healthier version of the heavier
cream mousse.


Ingredients
8 ounces semisweet chocolate
2 cups Ricotta cheese
2 tablespoons powdered sugar
1/2 cup finely chopped fresh pistachio
nuts




Directions

In a small saucepan coated with DuPont™ Teflon® nonstick, melt the chocolate over low heat. Place half
of it in a food processor or blender with the Ricotta cheese and sugar. Divide among wide-rimmed stem
glasses and top with the pistachios. Pass around the extra melted chocolate just in case! Serve at room
temperature.
