The Chefs in The Restaurant are very passionate about supporting local suppliers. This is reflected in our cheese
menu as all our cheeses are sourced from the local area. Our selection has a wide variety of textures and tastes
offering the very best from the North West. We hope you enjoy tasting them as much as we did!!
Sandham’s Smoked Lancashire A rich round Lancashire with a natural oak smoked flavour.
Ramshackle Sheep Very fresh acidic cheese, a bit similar to feta. This soft, almost
spreadable sheep’s milk curd is a firm favourite with the chefs. Made
only by Leagrams at Chipping.
Garstang Blue Rich and Creamy. This Lancashire Blue is strong and velvety
leaving a slight tang.
Dolphinholme Goat A light and mild goat’s milk flavoured cheese with a hard and full
texture.
Guernsey Gold A great cheese from Butler’s Ravens oak Dairy. Hand-made using
the milk of a particular herd of Guernsey cows in Cheshire. Soft and
smooth rather like a Camembert.
Blacksticks Blue A unique soft blue veined cheese with a distinctive amber hue,
deliciously smooth and tangy. This very special blue cheese is one
of a kind, a British classic, truly different to other blue cheeses.
Trotter Hill Tasty Very strong and acidic, this cheese has a long lasting taste.
Greenfields The award winning crumbly Lancashire from Greenfields dairy in
Goosnargh. This cheese is packed full of acidity.
Dewray Mild and smooth. Pale and creamy, a very popular Lancashire
creamy.
Mrs Kirkham’s The classic Lancashire made at Beesley Farm, Goosnargh.
Unpasteurised, crumbly and strong with a melt in the mouth feel.
John and Bob’s Baby Blue cows Smooth and silky, made in Chipping this great blue is similar to a
Roquefort.
Tasty Lancashire Bomb Very creamy with a definite tang and a powerful taste. Made by A.D
Sharrock in Goosnargh a ‘true farmhouse cheese’.

walnut bread, oat biscuits, seasonal chutney, celery and grapes.
