                      Veuve Clicquot Yellow Label Brut
Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny
bubbles. Next it is so pleasing to the nose: initially reminiscent of white fruits and
raisins, then of vanilla and later of brioche. Note the fine balance between the

The 2002 vintage has a pale gold colour with silver accents. It has a brilliant as- Shucked Oysters with avruga caviar & sauce gribiche
pect and effervescence is lively and long-lasting. The nose is very open, pure and
complex. The Chardonnay gives this wine a refined mineral flavour accompanied
with pleasant flowery notes of acacia. Aerating the wine reveals hints of yellow-
fleshed fruit and pastries (brioche, marzipan). These give way to delicately spicy Veuve Clicquot Vintage 2002
aromas, followed by elegant notes of liquorice and high-bred teas
Hiramasa Kingfish Sashimi with ginger, eschallot

                            Veuve Clicquot Rosé NV
The wine has a luminous colour with radiant rose accents. The nose is elegant
and generous, with initial aromas of fresh red fruit (raspberry, wild strawberry,
cherry and blackberry) leading to dried fruits and biscuit notes (almonds, apricots Veuve Clicquot Rosé NV

The wine has a deep pink colour with coppery, luminous glints.
Abundant streams of light, delicate bubbles rise delicately to the surface before
gently disappearing. The first nose is dominated by elegant aromas of red berry Veuve Clicquot Vintage Rose 2004
(redcurrant, blackcurrant)and firm fruits (wild strawberry, red plum, cherry). Fra-
grant hints of violet and lilac evoke the scents of springtime and autumnal notes Duck breast with maple and lavender, almond puree,

A fine, even effervescence greets the eye, the wine being a beautiful yellow with Vanilla crème brûlée with macadamia biscotti
deep golden highlights. On the nose, it is rich in the scents of ripe fruit (candied
fruits, berry liquor), with hints of toasts and brioche. In the mouth, the wine
displays both roundness and mellowness, combined with a delightful freshness
due to its gentle acidity. The aromas of ripe fruit are very noticeable.
