					Brawny Brownies

Yield: About 16 brownies (or 48 brownie bites)

6 tablespoons unsalted butter
5 ounces dark chocolate, chopped, or ¾ cup semi-sweet chocolate chips
2 eggs
2 teaspoons vanilla
½ cup sugar (or granulated fructose)
½ cup Purple Puree
¼ cup plus 2 tablespoons whole wheat flour
¼ cup oat bran
½ teaspoon cinnamon
1 teaspoon instant coffee powder (optional)
1 tablespoon cocoa powder
¼ teaspoon salt
Nonstick cooking spray
1 cup chopped walnuts (optional)
Chocolate chips to sprinkle on top (optional)

9-inch square baking dish or 9-by-13-inch baking dish

Preheat oven to 350 degrees F. Spray the bottom of a baking dish.

Melt the butter and chocolate together in a double boiler or metal bowl over simmering
water. Remove from heat and allow mixture to cool a bit. Meanwhile, in another bowl,
stir together the eggs, vanilla, sugar, and Purple Puree. Combine this purple egg
mixture with the cooled chocolate mixture.

In a mixing bowl, combine flour, oat bran, cinnamon, coffee powder, cocoa, and salt.
Add this to the chocolate mixture, and blend thoroughly. Mix in the chopped walnuts, if
using, then pour the entire mixture into the baking dish.

Bake for 30 to 35 minutes, until a toothpick comes out with just a few crumbs on it. All
to cool completely before cutting brownies.
I used two small glass baking dishes, spread the batter in a thin layer, than later cut the
brownies into bite-size pieces. The baking time was about 30 minutes.
