PROFILE
Gerard has had many years experience in the hotel and catering industry, gaining experience and
expertise from small privately owned to large corporate hotels and restaurants in the uk.

Gerard has a pleasing, efficient, friendly manor and enjoys meeting all types of people life has to
offer. Although he has old fashioned values and is very family orientated, he loves learning new tasks,
exploring challenges and helping any businesses he is involved with.

General operational everyday good management practise, specifically man management experience and
his ability to motivate teams and gleam respect, has helped him achieve excellent results throughout
his career.

Amongst Gerard skills, financial management has stood out over the last five years as a particular
strength creating budgets, cash flows, break-even analysis and controlling all aspects of a successful
profitable business.

His passion for good service and impeccable standards drives and motivates Gerard to continue
working in the industry.

Although Gerard has worked in all styles of operation, his involvement in the creation of drake’s 20
bedroom boutique hotel in Brighton over the last five years and the subsequent support since to date,
has no doubt assisted in the success it is enjoying today.

Gerard genuinely believes that offering a good quality product, i.e. boutique style with exceptionally
service will always command a secure position in any market place no matter how bad the economy is.

A team of well motivated staff, trained to a high standard with a clear vision and mission statement to
believe in and strive for. With profit share and staff incentives offered with clear achievable targets
set. This has always been Gerard’s successful formula he has used to gain excellent results.

In July 2007 Gerard set up his small consultancy company to help hotels, restaurants and pubs in all
aspects of their business. His success has included setting up full management reports, reviewing
business performance. He has introducing purchasing audits followed up by a full buying nominated
suppliers system saving over £20k per annum for some clients. Business projections, breakeven
analysis, forecasting systems, HR procedures, payroll control, food and beverage controls, market
research, mystery guest visits and many more aspects.

    accountability for three small hotels in central Brighton.

   Improved NOP from 15% to 40% of sales.
   Overviewed a £1.2 million refurbishment whilst trading
   Managed and developed a staff of 40 -50.

Royal Albion Hotel Brighton May 1989 – October 1997
General Manager (with Park Hotels before Britannia hotels)

    Increased sales from £1 million to over £2.5 million.
    Overviewed, with H/O a £7million refurbish project.
    Managed and developed 80 – 100 full/ part-time staff and maintained
     very low turnover.
    Implemented a full training programme with over 20 schools, colleges and
     educational institutions.
    Set up room’s management targets together with contacts with local
     hotels and town conference offices.
    Established the F&B to gain market share in weddings, Masonic lodges
     and social parties.

Imperial Hotel Hove May 1987 – May 1989
General Manager (Private Asian Owners)
    Created a stable team and good working product.
    Expanded both the sales and profit margins.
    Re-established conference and banqueting business, catering for over 40
     weddings each year.
    Managed and developed 40 – 50 full and part-time staff.
    Prepared the Hotel for major refurbishment closure in 1989.

Metropole Hotel Brighton with Metropole Group of Hotels (Now
known as The Brighton Hilton) August 1984 – May 1987 Food and
Beverage Manager
    Managed and developed 150 full and part-time staff.
    Supervised 13 departments throughout the Hotel.
    Responsible for a £4 million sales budget, out of the £10 million then
     turnover.
    Created and operated the first ever Christmas office party in the Hotels
     history.


From 1977 until July 1984
    I worked with Joe Lyons (Falcon Inns), and Trust House Forte Hotels
    developing from a Trainee Manager, to a Deputy General Manager. During
    that time I worked in a large variety of hotels, ranging from the famous
    Albany in Birmingham city centre, Burford Bridge Hotel in Box Hill Surrey
    (4 red stars) to a small coaching inn in Warwickshire.
