THE MICHELANGELO HOTEL This vacancy will be filled taking into consideration the Legacy Hotel Employment Equity policy JOB TITLE: ASSISTANT FOOD AND BEVERAGE MANAGER REPORTING TO: Food & Beverage Manager REQUIREMENTS: Hotel School Diploma (minimum 3 years of Managerial study) Previous sound experience in F&B inclusive of restaurant, banqueting and room service. Must currently hold an Assistant Manager position in a 4/5 star unit Knowledge in Opera and Micros SCOPE AND PURPOSE OF JOB: To effectively and profitably manage and control the Food and Beverage outlets assigned to them. Maintains operating standards as laid down by the Company and responsible for the achievement of desired operating F&B results A) SPECIFIC DUTIES: • Experience in operational controls and the ability to implement controls according to the requirements. • Above average knowledge of food planning and wines. Assist in menu planning and costing. • Strength in training staff, skills development of personnel and leadership of all staff. • Team player • Take control of the Food & Beverage Department in the absence of the Food & Beverage Manager. • Contain the ability to maintain excellent operational standards and service levels. • Excellent guest relation’s skills. • Excellent communications skills relating to staff and guests. • An exceptional eye to detail. • Thorough operational IR knowledge and practice. • Strong interpersonal and communication skills. • Candidate must display a high level of emotional intelligence and leadership skills • Maximise sales and control costs to enhance F&B profit margins. • Efficiently and effectively manage all operating equipment to maintain standards and cost control • Monitor the performance of all Food & Beverage staff on a daily basis and ensure performance appraisals are completed quarterly. • Ensure operational staff develop and maintain the competencies necessary to perform their tasks effectively and efficiently by means of training and development • Maintain consistent and fair discipline within the F&B department SUMMARY OF RESPONSIBILITIES: • Ensures the highest standards of safety and hygiene are maintained in the F&B department. • Check the functions sheets daily to ensure all guest requests are possible and actioned • Responsible for the implementation and maintenance of food and beverage controls as directed by the management • Directs, coordinates and controls the efforts of the food and beverage personnel in maintaining the highest standard of service, presentation and efficiency. • Assist in controlling of food, beverage and labour costs within the Food and Beverage ASSESSMENT OF PERFORMANCE: • Timekeeping and appearance whilst on duty. • The maintaining of costs and implementation of controls. • The timorous implementation of information which is required by the various staff • The ability to assist guest enquiries. • The efficiency of the department and the levels of service. • Guest service questionnaires.
