							Avocado and Apricot Breakfast Panini on Toasted Focaccia

Ingredients

1/2 ripe avocado, mashed
2 large hard-boiled eggs, chopped
4 slices applewood-smoked bacon,
chopped
8 thin slices Brie cheese
1/2 cup apricot preserves
2 (4x4-inch) squares Focaccia bread, cut
in half lengthwise to form top & bottom
pieces




Directions

Mix the avocado with the bacon. Build the panini with the remaining ingredients. Cook on the stove or in
a panini press until the cheese melts and bread is toasted, a few minutes. Cut in half and serve.
