Method
Blanche the pasta. Spread a little béchamel sauce on base of the dish and cover with strips of pasta and a layer of
piperonata. Add another layer of pasta. Spread with béchamel sauce and sprinkle with grated cheese. Add the mushroom a
la creme next, then more pasta, béchamel sauce, cheese etc. Ending with a layer of sauce with a good sprinkling of
parmesan.
