Backgrounder – Queen’s Park’s Favourite Chicken Recipes

This year, Chicken Farmers of Ontario (CFO) asked Premier Dalton McGuinty, the
leaders of both opposition parties, the Minister of Agriculture, Food and Rural Affairs and
Agriculture critics to share their favourite chicken recipes with us. The recipes can be
found below and on CFO’s website at

Ontario Premier Dalton McGuinty, MPP (Ottawa-South)
“Chicken Alexandra”

   • 1 can artichoke hearts
   • 4 boneless, skinless chicken breasts
   • 1 ½ cups fresh bread crumbs (optional)
   • ½ cup freshly grated parmesan cheese
   • 1/3 cup chopped fresh parsley
   • ½ cup butter
   • 2 garlic cloves, crushed
   • 1 ½ tsp Worcestershire sauce
   • 1 Tbsp Dijon mustard
   • 1 Tbsp lemon juice
   • 12 mushrooms trimmed and cleaned

-Rinse chicken breasts and pat dry.
-In a bowl, combine bread crumbs, parmesan cheese and parsley.
-Spread the mixture in a shallow pan.
-Melt the butter and add the garlic, Worcestershire sauce, mustard and lemon juice.
-Stir well and let the butter mixture cool slightly.
-Preheat oven to 350 degrees.
-Dip the chicken breasts in the butter then roll them in the crumb and cheese mixture
until they are well coated.
-Place the chicken breasts in a large, shallow baking dish.
-Place the mushrooms and artichoke hearts around the chicken.
-Pour the remaining butter (if any) over the chicken. You may wish to add a little more
melted butter!
-Bake until golden - approximately 45 minutes
-Baste once or twice with pan drippings.


Ontario Agriculture, Food and Rural Affairs Minister Leona Dombrowsky
MPP (Hastings--Frontenac--Lennox and Addington)
“Barbeque Chicken”
(Minister Dombrowsky tells us this is her mother’s favourite chicken recipe.)

Using 2-3 pounds of chicken, follow these steps:

Ingredients - Sauce:
   • 1 cup of ketchup
   • 1/2 cup brown sugar
   • 1/2 cup vinegar
   • 1 tbsp prepared mustard
   • ¼ cup of lemon juice

-Boil chicken legs for 20 minutes; drain; remove skin and place in casserole dish.
-Mix sauce ingredients and pour over chicken.
-Bake at 350 degrees for one hour.


Toby Barrett, MPP (Haldimand-Norfolk-Brant)
“Angel Hair Pasta Chicken”

2 Tbsp olive oil, divided
   • 2 skinless, boneless chicken breast halves - cubed
   • 12 ounces angel hair pasta
   • 1 carrot, sliced diagonally into ¼ inch thick slices
   • 1 (10 ounce) package frozen broccoli florets, thawed
   • 2 cloves garlic, minced
   • 2/3 cup chicken broth
   • 1 tsp dried basil
   • ¼ cup grated Parmesan cheese

-Heat 1 Tbsp oil in a medium skillet over medium heat. Add chicken and sauté for 5 to 7
minutes, or until chicken is cooked through (no longer pink). Remove from skillet and
drain on paper towels.
-Bring a large pot of lightly salted water to a boil. Add pasta and cook for 2 to 4 minutes,
or until al dente; drain and set aside.
-While pasta is cooking, heat 2nd Tbsp oil over medium heat in same skillet used for
chicken. Stir-fry carrots for about 4 minutes, then add broccoli and garlic and stir-fry for
another 2 minutes.
-Finally, stir in broth, basil and cheese and return chicken to skillet. Reduce heat to low
and simmer for about 4 minutes.
-Place drained pasta in a large serving bowl. Top with chicken/vegetable mixture and
serve immediately.


Ontario PC Party Leader John Tory, MPP (Dufferin-Peel-Wellington-Grey)
“Grilled Tandoori Chicken”

• 1 (4 - 4 ½ pound) chicken, cut into 8 pieces, skin removed
• 2 Tbsp vegetable oil
• ½ cup chopped white onion
• 2 Tbsp chopped garlic
• 2 Tbsp chopped ginger
• 1 tsp finely chopped serrano or jalapeno pepper, stem
   and seeds removed
• 1 Tbsp paprika
• 1 ½ tsp salt
• 1 tsp ground cumin
• 1 tsp turmeric
• 1 tsp ground coriander
• 1 tsp garam masala
• ½ tsp cayenne
• ½ cup plain yogurt
• 1 Tbsp fresh lemon juice

-With a fork, prick holes in the chicken pieces.
-Using a knife, cut diagonal slices 1 inch apart, and ½ inch deep into the larger pieces.
-Place the chicken in a baking dish.
-In a blender, combine the oil, onion, garlic, ginger and pepper, and process on high
speed to a paste.
-Add the paprika, salt, cumin, turmeric, coriander, garam masala and cayenne, and
process until well blended.
-Add the yogurt and lemon juice, and process to a smooth sauce, scraping down the
sides to combine all the ingredients.
-Pour the marinade over the chicken.
-Turn to coat evenly, rubbing the marinade into the holes and slits.
-Cover tightly with plastic wrap, refrigerate for at least 4 hours, and up to 24 hours,
turning occasionally.
-Preheat a grill.
-Remove the chicken from the marinade.
-Place on the grill and cook for 8 to 10 minutes on the first side.
-Turn, baste as needed, and cook on the second side for 8 to 10 minutes.
-Turn and continue cooking, as necessary until the chicken is cooked through, but still
tender, about 25 to 30 minutes.
(Alternately, bake in a preheated 425 degrees F oven on a baking sheet for 35 minutes.)

Ontario NDP Leader Howard Hampton, MPP (Kenora-Rainy River)
“Chicken Italiana”


•   4 chicken breasts
•   10 roma tomatoes chopped
•   1 Tbsp tomato paste
•   2 med zucchini sliced
•   1 green pepper and 1 red pepper sliced
•   10-12 portobello mushrooms
•   1 red onion chopped
•   1 cup of red wine
•   1/4 cup fresh basil chopped
•   1 clove garlic chopped
•   1/4 cup extra virgin olive oil
•   salt and pepper

-Mix oil, garlic and onion till golden
-Add Chicken - brown, 3 minutes on each side
-Add Tomatoes and basil, cook for 5 minutes.
-Add Vegetables - all.
-Add Wine, salt & pepper
-Add tomato paste to thicken sauce
-Cook over med heat for 30 minutes (until chicken is cooked)
-Serve over fettuccini noodles.
