POTATO RECIPES GARLIC PIZZA POTATOES 10 med. Potatoes peeled boiled & mashed 1 – 8 oz. Cream cheese 1 – 8 oz. Sour cream ½ t. garlic powder Mix all the above ingredients together. Place potatoes in a 9 x 13 pan. Pour melted butter & paprika over the top. Bake 350 30 – 40 min. Serves 6-8 TWICE-BAKED POTATOES Prepare and bake 8 large potatoes. Turn oven to 400. Cut a thin lengthwise slice from each potato: scoop out inside, leaving a shell. Mash the scooped out potatoes until no lumps remain. Beat in 2/3 to 1-cup milk in small amounts. (Amount of milk needed depends on the type of potato used.) Add ½ cup margarine, softened, ½ t. salt and dash of pepper; beat vigorously until potatoes are light and fluffy. Fill shells with potatoes. Sprinkle with shredded cheese if desired. Cook uncovered until filling is golden, about 20 minutes. Serves 8 BUFFET POTATOES 2 lb. Potatoes (about 6 med) 1 t. salt 3 T. snipped parsley 1 small onion, chopped (about ¼ c.) ¾ cup shredded sharp cheese (about 3 oz.) 3 T. margarine ¾ cup half & half Prepare potatoes for boiling. Cut into lengthwise strips, ¼ to 3/8 inch wide. Arrange potatoes in greased 2-quart casserole in 3 layers, topping each layer with dash of pepper and 1/3 each of salt, parsley, onion and cheese. Dot with margarine and pour half-and-half over potatoes. Cover and cook in 350-oven 1 hour. Uncover and cook until potatoes are tender, about 30 min. longer. Serves 6-8 AU GRATIN POTATOES 2 lb. Potatoes (about 6 med.) 1 medium onion, chopped (about ½ cup) ¼ cup margarine 1 T. flour 1 t. salt ¼ t. pepper 1 cups milk 2 cups shredded natural sharp Cheddar cheese (about 8 oz.) ¼ cup fine dry bread crumbs Paprika Wash and peel potatoes. Cut into enough thin slices to measure about 4 cups. Cook and stir onion in margarine in 2-quart saucepan until onion is tender. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat. Stir in milk and 1 ½ cups of the cheese. Heat to boiling, stirring constantly. Boil and stir 1 minute. Place potatoes in ungreased 1 ½-quart casserole. Pour cheese sauce on potatoes. Cook uncovered in 375 oven 1 hour. Mix remaining cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Cook uncovered until top is brown and bubbly, 15 to 20 minutes longer. Serves 6.
