					RECIPE for GOURMET HUNT Ep 2 - Chicken

The Chicken

Ingredients:
One whole chicken
30g ginger
2 cloves of peeled garlic
1 stalk of spring onion
1/2 teaspoon of salt
1/2 kg of chicken bones
4 litres of water

Method:
1. Season the chicken with salt, and stuff it with garlic, ginger and onions.
2. Boil water in a large pot. Add chicken, turn the heat down and simmer for 30 minutes.
3. Remove chicken and wash under cold water for 2 minutes.
4. Drain, rub vegetable oil over the chicken and let it cool to room temperature.
5. Serve with cucumber and tomatoes.

The Rice

Ingredients:
360g rice
5 cloves of garlic
5 shallots
3 teaspoons of vegetable oil
3 1/2 cups of chicken broth
1/2 teaspoon of salt

Method:
1. Wash and drain the rice in a colander for 10 minutes
2. Heat the vegetable oil in a wok. Add shallots and fry till fragrant. Add garlic and fry for 1
   minute.
3. Add the rice grains and fry for 4 minutes.
4. Transfer to a rice cooker and cook the rice as usual.

The Chilli Sauce

Ingredients:
60g red chili peppers
30g shallots
30g garlic
4 teaspoon lime
1 teaspoon vinegar
2 teaspoon sugar
Half cup of chicken broth

Method:
1. Peel shallots, ginger & garlic. Pound or grind with chilli till very fine.
2. Put all into a bowl and add boiling chicken broth.
3. Add remaining ingredients, and cool it for one hour.
