What is Culinary Located in Boulder, Colo., and founded in 1991, Culinary School of the
School of the Rockies (CSR) is the premier culinary school in the Rocky Mountain
Rockies? region, attracting a local, regional and national following.

The Culinary Arts Farm to Table Externship showcases a five-week,
hands-on experience in Colorado, allowing students to appreciate the
passion and commitment family farmers and artisan producers have for
integrative, sustainable farming practices. They participate in a
restaurant apprenticeship with Colorado’s finest chefs who practice
localism, seasonality and sustainability.
The Culinary Arts France Externship immerses students in French
culture and cuisine at the source. Students taste the flavors of Provence,
going behind the scenes to cook with French chefs at the historic
Château de Suze la Rousse, home of Université du Vin. They also
participate in a stage (apprenticeship) at a French restaurant, hotel or

The Culinary Arts Farm to Table Externship Program tuition is $24,850.
What is the Chef Chef Track is a part-time, fast and affordable program.
Students meet just 15 hours a week, allowing them to keep full-time jobs
while earning a diploma. For 15 weeks, students work side by side with
one primary instructor and several of the area's best chefs and caterers.
Tuition is $7,950, which makes Chef Track the most affordable
professional culinary program in Colorado.
What is the Pastry Pastry Arts is an intensive, five-week program that offers a fast and
Arts Program? effective route to a pastry career.
This program covers essential baking and pastry skills, from classic
French pâtisserie and confections, to plating restaurant-style desserts.
Tuition is $6,750.
Who is the After careers as a French teacher and attorney, Founder/Director Joan
founder? Brett started Culinary School of the Rockies in 1991.
Brett attended Peter Kump's New York Cooking School (now known as
The Institute of Culinary Education). She completed an apprenticeship at
the Small Wonder Café in Boulder, Colo.
She holds a Bachelor of Arts degree in French from Smith College in
Northampton, Mass., a master's degree in French and Teaching from
The Johns Hopkins University in Baltimore, Md., and a Juris Doctorate
from the University of Colorado School of Law in Boulder.
Accreditation Culinary School of the Rockies is nationally accredited by the
Accrediting Council for Continuing Education and Training (ACCET), and
approved and regulated by the Colorado Department of Higher
Education, Division of Private Occupational Schools.
