Hawaiian Shoyu Chicken
1 cup Shoyu or soy sauce
1 cup brown sugar
1 ¼ cup water
5 lbs chicken thighs
Mix all ingredients except chicken in a bowl until the sugar is completely
Remove all skin and visible fat from chicken thighs. Make two cuts on
either side of the thigh bone being careful not to cut all the way through.
Pour mixture into a pot and add chicken.
Bring to a boil and then let simmer for 30 minutes. Be sure to stir often.
Remove from heat when sauce thickens and meat begins to fall off the bone.
Place chicken on plate (or on top of rice) and pour sauce over chicken.
