The Raw Culinary Arts Associate Chef and Instructor
CertificationTM Series is the foundation of our program and teaches
a progressively complex set of culinary skills—everything from
mastering knife technique and setting up a healthy pantry to charting
menus, presenting culinary demonstrations, and even creating dishes
without recipes. The Gourmet Raw Food Chef CertificationTM Series takes students to new
levels of expertise, as they hone their skills and gain confidence through specialized study.
Topics include advanced recipe development, elegant entertaining and raw event catering,
and the science of raw food nutrition. Living Light makes healthy living delicious!

FUNdamentals of Raw Living FoodsTM
In this entry-level demonstration-only class, you will discover the magic of creating fabulous
organic raw vegan cuisine for optimum health and rejuvenation! Dozens of superb culinary
presentations will show you everything you need to know to create a
wide variety of delicious, easy-to-prepare raw recipes. You will sample
freshly made raw taste sensations, including appetizers, fruit smoothies,
soups, sauces, salads and salad dressings, simple entrées, patés, wraps
and rolls, nut milks, nondairy cheeses, crunchy crackers, dehydrated
goodies, and amazing desserts. You will learn sprouting techniques and
how to use the equipment and supplies for a raw kitchen. Even if you
are an expert professional chef, you will encounter a whole new world
of food-preparation skills that are specific to raw cuisine.

Essentials of Raw Culinary ArtsTM
This five-day hands-on course expands on FUNdamentals of Raw Living FoodsTM and
provides the foundation necessary to attend our Associate Chef and Instructor TrainingTM.
Essentials offers the unique opportunity to work hands-on with some of the world’s most
outstanding raw food chefs and teachers and provides you with ample personal attention and
assistance with your individual goals. You will become confident
with your knife technique and familiar with kitchen equipment and
time-saving gadgets of all kinds. You will learn how to develop
recipes; combine herbs and spices to create both classic and ethnic
flavors without using recipes; balance textures and flavors within
individual recipes or across entire menus; sprout grains, seeds, and
legumes; make luscious meals; combine foods for optimum
digestion and nutrition; create raw versions of cooked food recipes;
organize and manage a raw food kitchen, and much more!

Following FUNdamentalsTM and Essentials, Raw Culinary Arts Associate Chef and Instructor
TrainingTM is a ten-day hands-on training in all aspects of raw cuisine. We know that most
people would love to have more energy and vitality without giving
up the pleasures of pizza, burgers, lasagna, pasta, burritos, breads,
pies, cakes, candy, and other comfort foods. We designed this course
so that you can prepare healthy versions of your favorite foods to
share with friends and family. Prepare delicious, nourishing, high-
energy, raw gourmet foods without giving up flavor, appearance, or
satisfaction. The instructor segment of the program teaches you to
organize and present successful raw food preparation classes for
groups of all sizes. Learn how to find venues, market classes,
communicate effectively with an audience, and much more! Each
participant will give a culinary presentation. Whether you have been teaching for years or
have always avoided public speaking, you’ll come away from this program a more effective,
better organized, and more confident presenter. Graduates can purchase Instructor
Empowerment KitsTM with complete materials for marketing, planning, and teaching raw
food classes. Kits include recipes, shopping and equipment lists, class-room set up, how to
price your classes, and more. With compassionate, professional guidance, we make certain

Raw Culinary Arts Associate Chef and Instructor CertificationTM
The highly regarded Raw Culinary Arts Associate Chef and
Instructor CertificationTM includes FUNdamentalsTM, Essentials, and
Associate Chef and Instructor TrainingTM, the foundation upon
which we have built all of our subsequent certification programs.
These three classes may be taken consecutively in the same session
or individually within a twelve month period. Completing the Raw
Culinary Arts Associate Chef and Instructor CertificationTM provides
students with essential techniques and skills they need to become
proficient in the art of raw cuisine, and is a prerequisite for
continuing with Living Light’s advanced trainings.
Gourmet Raw Food Chef CertificationTM Series
This all-inclusive series of courses takes students to the next level of confidence and
expertise: exploring world cuisines, developing recipes, transforming traditional cooked
dishes into health-promoting gourmet raw cuisine, organizing large
events, and learning about the science of raw food nutrition. You’ll
go home empowered and confident in your ability to produce
incredible new dishes without the need for recipes. You will also
learn to write recipes suitable for publishing. Once the Associate
Chef and Instructor CertificationTM Series is completed, the
following subsequent courses may be taken within two years: Ethnic
Flavors in Recipe DevelopmentTM, RawFusion Gourmet Spa
CuisineTM, Raw Event Catering and Elegant EntertainingTM, and
Science of Raw Food NutritionTM.
Ethnic Flavors in Recipe DevelopmentTM
An empowering five-day advanced training course designed for our Associate Chef and
Instructor graduates. You’ll receive personal guidance from outstanding chefs and instructors as
you travel the world of Ethnic Flavors to India, Southeast Asia, the Mediterranean, and other
exotic locales. Explore the tastes and textures of each region as you prepare its cultural cuisine.
Learn to write recipes suitable for publication and to create incredible new dishes without the
need for recipes. Reach new levels of creativity in the grand finale, our fabulous dessert
extravaganza. Prerequisite: Raw Culinary Arts Associate Chef and
RawFusion Gourmet Spa CuisineTM
In this course, you’ll experience the light and luscious fare served at
healthy lifestyle retreats in exotic locations. We designed RawFusion
Gourmet Spa CuisineTM to support an active lifestyle. Starting with
very simple ingredients, you will learn how to combine textures and
flavors to produce a wide array of exotic dishes and gourmet feasts!
With recipes emphasizing fruits and greens, RawFusionTM is the favorite cuisine of the Living

Raw Event Catering and Elegant EntertainingTM
Anyone interested in catering raw food events from intimate appetizer parties for 10 to
elegant weddings for 100 or more will enjoy Raw Event Catering and Elegant EntertainingTM.
Learn about menu planning, organizing, budgeting, pricing,
negotiating contracts, and managing your catering team. Discover
secrets of plating and presentation that you can use for beautiful
everyday meals or elegant dinner parties. Learn to create stunning
buffets and a variety of garnishes, from simple tomato roses to
impressive carrot butterflies, for beautifully presented meals. Gain
hands-on experience as you participate in catering raw events.

This two-day course covers topics in raw food nutrition including raw vegan sources of
protein, vitamins, minerals, and essential fatty acids, as well as blood-sugar regulation, pH
balance, how cooking affects foods, anti-inflammatory nutrition, and weight management.
This is a great course for chefs, health educators, and anyone who wants to gain the
knowledge base necessary to achieve optimum health. Prerequisite: none required
Science of Raw Food NutritionTM ll
This comprehensive five-day course builds upon the knowledge base
learned in level I and introduces many new topics that are essential
to understanding raw and living food nutrition. This class covers
essential information about raw food, living food, and vegan diets.

Benefits of Raw Food Nutrition Educator CertificationTM
This two-day course follows Science of Raw Food NutritionTM II
and prepares students to present fundamental raw food nutrition
information with authority, accuracy, and confidence. It is highly
recommended for health educators and raw food chefs. All
participants will receive a CD containing two turnkey PowerPoint presentations.

The Raw Culinary Arts Professional Chef CertificationTM is awarded to individuals who
demonstrate creativity and expertise and who develop experience in every aspect of raw
culinary arts, including kitchen management, food design, recipe and menu development, large
event catering, pastry arts, and raw nutritional science. Students must
have completed the Gourmet Raw Food Chef CertificationTMSeries,
and are also required to complete all courses of study, including New
Holiday Traditions, internships, externships, and coursework,
followed by a comprehensive written and practical examination.
Many students repeat the Associate Chef and Instructor TrainingTM
as part of their internship program. Internships are designed for
each candidate and are available to graduates of the Raw Culinary
Arts Associate Chef and Instructor CertificationTM.

Living Light Café and Cuisine To-Go is our all organic, mostly raw vegan café,
offering delicious juices, smoothies, desserts, entrées, and a grab-and-go section for raw food on
the run! Start your day with wheatgrass juice and a fresh fruit smoothie or crunchy buckwheat
granola with almond milk. For lunch, try a “not tuna” sandwich on kamut bread, a sunflower
burger with all the trimmings, or Sicilian-

Raw food revolutionary, Cherie Soria, has been teaching
gourmet raw vegan cuisine to individuals, chefs, and instructors for
over 15 years and vegetarian culinary arts for more than 35 years. She
is the founder of Living Light Culinary Arts Institute and the author
of several books, including Angel Foods: Healthy Recipes for Heavenly
Bodies and The Raw Food Revolution Diet: Feast, Lose Weight, Gain Energy,
Feel Younger! Cherie has personally trained many of the world’s top
raw food chefs and instructors and is often referred to as “the mother
of gourmet raw vegan cuisine.” Cherie says, “I experience great
joy connecting personally with students and helping them to become the best that they can be—
not only as raw food chefs, but as radiant, inspiring teachers. The key is to accept people
where they are on their path and to help fuel the light that shines within them!”
Dan Ladermann is a Certified Hippocrates Health Educator and a graduate of
Anthony Robbins’ Mastery University. As president of the Institute for Vibrant Living, Dan
conducts educational events worldwide that promote health and well-being. Dan says, “I
have a passion for assisting people in their transformation and teaching them how to create
lives filled with health, joy, and abundance. Watching them blossom and become empowered

Rick Dina, DC has been a raw food vegan since 1987. He worked at
Hippocrates Health Institute and for the Juiceman before entering Life Chiropractic
College. He practiced at True North Health Education Center, helping patients
recover from high blood pressure, diabetes, and autoimmune disorders, and other
diseases, with fasting and vegan nutrition. After teaching at Bastyr University, Dr.
Rick is now in private practice in San Rafael, CA.
Karin Dina, DC has been studying and practicing raw food nutrition since 1990.
A Magna Cum Laude graduate of the University of Colorado and Palmer College of
Chiropractic West, and an honors student in naturopathic medicine from Bastyr
University, Dr. Karin has also extensively studied plant biology, advanced nutrition
and nutritional biochemistry. She is now in private practice in San Rafael, CA.

Jennifer Cornbleet is a nationally recognized raw food chef, instructor, and author
of Raw Food Made Easy for 1 or 2 People. A certified chef/instructor with Living Light, Jenny
conducts classes and workshops in the Chicago area and nationwide and has been
instrumental in developing Instructor Empowerment KitsTM for Living Light graduates.
Patricia Hoskins is our school administrator as well as a certified Living
Light chef/instructor. With extensive professional expertise from her years as a
classic Montessori teacher and school administrator, she organizes all of the
culinary demonstrations at Living Light. Patricia is a skilled facilitator who helps to
create a sense of community among students and faculty alike.
Kristin Suratt has been a natural foods chef for more than twenty years. She owned a
catering company, Extraordinary Events, in New Orleans, where she also created a natural
foods restaurant. Kristin has been a corporate chef, consultant, and teacher at raw retreat
centers internationally. She is also our PR director, events coordinator, and marketing
manager at Living Light.
Martine Lussier, our culinary programs manager, is a certified Living Light
chef/instructor who is passionate about nutrition and culinary art. An active
sportswoman, Martine knows the value of raw vegan foods for health and vitality.
She loves developing new recipes and teaching others how to prepare health-
promoting foods for themselves and their families.
Kari Bernardi, formerly Director of the Monterey County Farm-To-School
Partnership, has been instrumental in bringing fresh organic fruits and vegetables into
schools, writing healthy school food policies, and teaching kids farm fresh nutrition
education. Kari is a certified Gourmet Raw Food Chef, and was one of the first Living Light
students over 10 years ago. Currently, Kari is sharing her passion and years of expertise as
a staff instructor at Living Light Culinary Arts Institute.
Elaina Love, a certified Living Light chef/instructor, is the author of Elaina’s
Pure Joy Kitchen and a presenter at festivals, retreats, and seminars around the world.
She is the proprietor of PureJoyPlanet.com and co-owner of Café Soulstice, a raw
café in San Mateo, California. Elaina offers her considerable expertise during our
catering and holiday entertaining courses.
Vinnette Thompson earned her culinary arts degree from the Culinary Institute of
America and is a graduate of the Living Light Culinary Arts Institute. Vinnette has two
culinary passions, vegetarian cuisine and culinary education. A chef for more than 25 years,
she is executive chef of the Raw Food Underground in Florida, where she also teaches
culinary arts for the Palm Beach school district.

Q: Do I have to eat 100% raw to take Living Light classes?
A: No. Many of our participants do not eat all raw food. We
support everyone, wherever they are on their dietary path.
Q: Do I have to take the chef training all at once, or can I
take it in segments?
A: Classes may be taken either in the same session or as
individual segments within the same year, but do need to
be taken in succession.
Q: What if I want to start with one class?
A: FUNdamentals is open to everyone.
Q: How much culinary skill do I need?
A: We accept people with all levels of experience, from
novice to professional.
Q: How much hands-on training will I receive?
A: Each Living Light class with the exception of
FUNdamentals and New Holiday Traditions , offers
daily hands-on training.
Q: Can I bring my family?
A: Many people come with their families, who enjoy the
beautiful Mendocino Coast while a family member is
in the classroom.
Q: How much time is spent in the classroom?
A: Most classes begin at 9 AM and end at 6 PM, and some
evenings may be spent doing homework. Lunch breaks
are 11/ 2 hours with most weekends off.
Q: Is everyone required to take the prerequisites?
A: Yes. Even if you are experienced in raw food preparation,
you are required to take FUNdamentals before taking the
