              Buttermilk-Bacon Mashed Potatoes

Ingredients:

1/4 cup crumpled cooked soy or turkey bacon
2 tablespoons chopped green onions
Sat and pepper to taste
3 medium Russet potatoes (5 ounce each)
6 tablespoons low-fat buttermilk

Directions:

1)   Boil potatoes with skin until tender or fork will
     pierce through potato. Drain.
2)   Mash potatoes with a mixer. Mix in buttermilk,
     bacon, and onions.
3)   Season with salt and pepper and serve.

4 servings (1/2 servings)
