Ener-G Foods, Inc. is a family owned business located in Seattle, Washington that has evolved to become one of the largest producers devoted to special diet foods in the United States. When Sam Wylde purchased Ener-G Foods, Inc. in 1962, we were little more than a two-person operation in which all packing was done by hand. Shortly after acquiring Ener-G Foods, Sam was approached by Dr. Scribner of the University of Washington to help work on a low protein bread suitable for those on kidney dialysis. Sam Wylde and Ener-G Foods worked on low protein bread for about a year before arriving at an acceptable result. Made with a base of wheat starch it was low in protein, sodium, potassium and phosphorus, therefore acceptable for a low protein diet. Low protein foods developed by Ener-G Foods also address several other dietary disorders including PKU, MSUD, glutaric Acidemia, Argininemia, Organic Acidemia, Homocystinuria, Argininemia, Tyrosinemia, Propionic Acidemia. Sometime later, Dr. Cyrus Rubin professor of Gastroenterology at the University of Washington sent his dietitian, Elaine Hartsook to us with a request for a gluten free bread with one restriction, 'I don't want any wheat starch'. At that time Sam Wylde, III, having completed his MBA in Oregon, moved back to Seattle to assist his father with Ener-G Foods. Sam Wylde, III began working nights on developing gluten-free breads and other products without the use of wheat starch.

Glossary of Commonly Used Ingredients
Bamboo Fiber
Is derived from the bamboo plant’s cellulose (fiber).
Hi-Maize (Resistant) Corn Starch
For a long time we believed fiber came in only two forms, soluble and insoluble. Over the last 20 years, nutrition researchers have discovered a third kind, resistant starch. These starches escape digestion and ferments in the large intestine, it’s insoluble and a pre-biotic fiber -good for your heart, immunity and overall health.
Calcium Lactate
Calcium salt from lactic acid, a natural acid produced by fermentation on dextrose, corn sugar. It is not dairy derived.
Calcium Carbonate
A natural substance extracted from limestone. Its dairy-free and is a great source of calcium. Ener-G Foods uses Calcium carbonate as a sodium-free, aluminum-free baking soda substitute.
Lecithin
An emulsifier, it allows opposing liquids (e.g. water and oil) to mix together, creating a thick, but smooth texture.
Carboxymethylcellulose (cellulose gum)
A sodium salt used as to thicken, emulsify, and stabilize baked goods.
Methylcellulose (carbohydrate gum)
A gummy product derived from cellulose (plant fiber). Its used to as a binding agent in gluten-free baking, it acts as a gluten substitute.
Citric Acid
An acid used commercially to add flavor to food products. Our Citric Acid is derived from fermenting corn syrup (sugar).
Orange Citrus Fiber
Derived from the citrus pulp of an orange, Orange Citrus Fiber maintains moisture, reduces the fat, calories and carbohydrates in baked goods, increases dietary fiber, and acts as a natural preservative without compromising its taste.
Glucono-Delta-Lactone
An acid used in our baked goods, once combined with a base (baking soda) it creates a raising action. Commonly found in Ener-G’s yeast-free products, rising bread without yeast. Derived from fermenting rice, not corn.
Guar Gum
A powder derived from the seeds of the guar plant, cyamopsis tetragonolobus. Guar Gum is a commonly used binding ingredient in gluten-free baking. Gluten is a protein found in wheat, barley, rye, and triticale, in baked goods it binds all the ingredients together creating an elastic and chewy product. Gluten-free flours, obviously, does not have this protein, so a gluten substitute is required. Guar Gum acts as a suitable replacement for gluten.

Palm Fruit Oil
Not to be confused with palm kernel oil, the fruit oil is trans-fat free and cholesterol-free, rich in antioxidants, and is a big source for beta carotene and vitamin E. This oil is naturally semi-solid at room temperature, meaning it does not require hydrogenation.
Xanthan Gum
A gluten substitute, it’s a binder commonly used in gluten-free baking. Xanthan Gum is derived from fermenting corn sugar with Xanthomona campestris.
Yeast
We use Baker’s Yeast to make our baked goods rise.

CORN MIX MUFFINS OR BREAD TAPIOCA WAFFLES
Ingredients: (2) eggs seperated (1 cup) buttermilk or orange juice concentrate (1/4 cup) oil (1 cup) Ener-G Pure Rice Flour (1/2 cup) Ener-G Tapioca Flour (1-1/2 tsp) baking soda (1 tbsp) baking powder Directions: Beat egg whites to form dry peaks. Set aside. Mix egg yolks with buttermilk and oil. In a separate bowl stir dry ingredients together. Mix egg yolk mixture into dry ingredients. Fold in egg whites. Bake in an oiled waffle iron. Ingredients: (1 ) egg (1 cup) milk or milk sub. (2 tbsp) oil (1-1/3 cup) Ener-G Corn Mix (1/4 tsp) salt (1 tbsp) sugar (1 tsp) baking powder Directions: Preheat oven to 375 degree. Whip the egg until frothy. Add milk and whip for 20 seconds on medium speed. Stir in oil. Add Corn Mix, salt, sugar, and baking powder. Mix for 1 minute, or until well blended. Pour into sprayed or greased muffin tins, about 2/3 full. Place in preheated 375 degree oven and bake for 18-20 minutes. Makes 6 muffins. For bread use one pound loaf pans. Instructions are the as muffins. Bake bread until golden brown on top.
RICE MIX BANANA BREAD
Ingredients: (1 cup) sugar (2-1/2 cups) Ener-G Rice Mix (1/2 tsp) baking soda (1/8 tsp) cinnamon (4 large) eggs, whipped until fluffy (1 cup) mashed banana (1 cup) milk (1 tsp) vanilla flavor (gluten free)-optional (1 tsp) banana flavor (gluten free)-optional (3/4 cup) oil Directions: Preheat oven to 350 degrees F. Mix first 5 ingredients together. Mix in remaining ingredients for about 2 minutes. Nutmeats may be added as an optional ingredient. Pour into 9 X 5 X 4 inch greased loaf pan or into a 9-1/4 X 5-1/4 X 2-3/4 inch loaf pan. If desired, sprinkle top with nuts. Place in oven and reduce temperature to 325 degrees F. Bake for 70 minutes or until done.
POTATO MIX EGG-FREE PANCAKES
Ingredients: (4 tsp.) Ener-G Egg Replacer (packed) (6 tbs.) Orange Juice (1 tbs.) Brown Sugar (1 tsp.) gluten-free Vanilla (1/8 tsp.) Nutmeg (1/4 tsp.) Cinnamon (3/4 cup) Milk or Soymilk (1/4 cup) Ener-G Potato Mix (1/2 cup) Ener-G Rice Mix (1 tsp.) Baking Soda (1/2 tsp.) Baking Powder Directions: Whip first 2 ingredients together. RICE FLOUR DEVIL’S FOOD CAKE
Ingredients: (2 cups) Ener-G Pure Rice Flour (1 tsp) baking soda (1 tsp) salt (1/2 cup) soft margarine (1-1/2 cup) brown sugar-packed (2 large) unbeaten eggs (1-1/4 cup) milk (1 tsp) vanilla (3 sq.) unsweetened chocolate-melted Directions: Preheat oven to 350 degrees F. Lightly oil and dust with rice flour two 1 1/2" deep 8" layer pans. Sift rice flour with baking soda and salt together three times. Cream the margarine and sugar in a large bowl. Add eggs and beat until light and fluffy. Combine milk and vanilla. Mix in chocolate. Beat milk and flour mixture alternately into margarine mixture. Pour into pans. Bake for 25 to 30 minutes. Cool in pans before turning onto wire rack.

Directions: Lightly grease or spray a 9-inch pan. Preheat oven to 370 degree. In large mixing bowl blend the white rice flour through the soy flour together. Add to the dry mix the vanilla through the nutmeg. Mix for about 10 second, scrape the sides and mix an additional 20 seconds. Quickly mix in the vinegar. Pour batter into lightly greased pan. Place in oven right away, as this batter will rise quickly. Turn oven down to 350 degrees and bake for approximately 32 minutes. Let sit for 5 minutes
Directions: Preheat oven to 350 degrees F. Soak raisins in hot water for 1/2 to 1 hour. Cream shortening, sugar, eggs, liquid coffee and vanilla together. Add the sifted Brown Rice Flour, baking powder and baking soda. Mix in raisins, brown sugar, walnuts, cinnamon and coffee crystals. Add yogurt and lemon juice and cream all the ingredients together to form a smooth batter. Pour into an oiled 10inch cake pan and bake for 55 to 60 minutes.

Breads, Cookies, Snacks – 1 year, Donut Holes – 6 months, Flour, Mixes, Pastas – 3 years, Egg Replacer – 3 years, Rice Bran (refrigerated) – 3 years. All our baked products including breads are given a one-year shelf life because they are vacuum packed to retain freshness and last longer for the consumer. It is not necessary to refrigerate or freeze our baked products prior to opening.
Q: Do you ship outside the U.S.?
Q: How do you store your products after they have been opened?
Canadian customers may order directly from us, however to save money on shipping and time with customs you may mail order from our distributor Heart Smart Foods located in Sherwood Park, Alberta 800-561-6720. Condensation may form in the package if the product is stored in a warm environment, simply put in the refrigerator and the moisture should re-absorb back into the product. This is usually caused from oxygen in the bag expanding and causing the bag to bloat. The product inside is not harmed but should be placed into another bag and then stored in the refrigerator.

After the breads have been opened, we recommend storing them in an airtight container and putting them in the fridge.
Q: How long does Ener-G bread products last after opening?
The breads usually last about a week with refrigeration. We do not any preservatives to the breads so they may not last as long as normal types. We do not advise that you freeze them in the Ener-G Foods packaging.
Q: Why is there moisture in the package.?

Q: Why does it say ‘Do Not Freeze,’ can it be frozen?
We place the instruction “Do Not Freeze’ on our packaging because it is not necessary to freeze the products prior to opening. In fact, freezing our breads in their vacuum packed bags may cause them to dry out. We recommend if you wish to freeze the breads or our other vacuum packed products that you removed them from the original packaging and place in a freezer bag or air tight container. A good method to follow is freeze two slices at a time wrapped in foil. We cannot guarantee the quality after they have been opened.

Q: What can you do or not do with the Egg Replacer?
Egg Replacer is used mainly in baking from scratch. Egg Replacer can be used with some commercial mixes but it is not recommended. Since there are no eggs or egg derivatives, it CANNOT be scrambled, hardboiled, etc. One Egg = 1 1/2 tsp Egg Replacer to 2 tbsp. of water. To replace egg whites use the same amount as replacing the entire egg, so One Egg White=1 1/2 tsp Egg Replacer to 2 tbsp of water. To replace the egg yolk stir 1-1/2 tsp. Egg Replacer into 1 tbsp of water. Always mix the Egg Replacer with the necessary water separately before adding to recipe. This information is also found on our Egg Replacer box. There are approximately 113 servings per 16 oz box.

Palm Fruit Oil is often confused with Palm Kernel Oil. Palm Kernel Oil is derived from palm kernels and contains much higher levels of saturated fat than Palm Fruit Oil. Ener-G Foods, Inc. is a wheat-free, gluten-free, dairy-free, peanut free, tree-nut free, kosher certified facility. The company has three separately owned production lines. All products manufactured by Ener-G Foods, Inc. are subject to our HACCP program. This program is in addition to current Good Manufacturing Processes required by the federal and state governments. The HACCP (Hazard Analysis and Critical Control Point) program identifies critical points in production operations that inherently lend (even minutely) itself to contamination issues (including crosscontamination), food safety issues, etc. Even though this program is not required for bakeries, the company believes that by being a HACCP compliant facility, all risks of cross contamination, or even any food safety issue will be completely eliminated.
Ener-G Allergen Statement
Our food safety programs for all three production lines require us to clean, sanitize, and inspect after each and every product is run through the line. In addition, the equipment utilized by the company is designed for multiple products. Even with this program, the company would like to disclose any of the top 9 allergens that are used on each of the production lines. Bakery: The bakery production line uses Egg Powder and Dry Whole Eggs for a limited number of products. These products are produced on separate equipment (pans, bowls, etc) and are separated when not in use. The only common equipment for these known allergens and other products are the ovens. The food product is never in contact with the oven at any time. Snack Foods Line: The snack food line produces our pretzels and in the future, other snack items. This production line is in Pennsylvania. The snack food line also produces pretzels with sesame seeds and poppy seeds.
