Bill McBride has over 35 years experience in the food industry both in domestics and
international environment. He has worked extensively and has expert knowledge on
food safety, high risk food services, food and quality auditing, quality assurance and
supply chain QA etc. Bill has worked in various roles in a variety of local and
multinational food manufacturers, he has managed and trained over 1000 people in
the food sector and has presented in many of the major international food safety and
quality conferences and seminars in the Asia Pacific Region as well as in the US.


Bill is the General Manager, Food Division of NCS International- a leading Asia-
Pacific certification and auditing body for the food and agricultural industries. Bill has
developed and maintains the food industry division of NCSI; under his strong
leadership and extensive experience within the industry, he has successfully led
NCSI‟s food Division to achieve accreditation to international standards and
programs and developing the US food certification market continuously.


Bill is a member of the Institute of Food Technologist (US) and a member of the
Australian Institute of Company Directors; an accredited trainer for Chartered
Institute of Environmental Health (CIEH) UK and for the National Sanitation
Foundation (US); he has a BSc in Pure Science, University of Glasgow, Scotland and

Gary Kennedy graduated from the School of Food Technology at UNSW in 1984. He
has worked extensively in the meat, small goods, and extended life cook chill and
high risk food services industries before starting a career as a food safety auditor and
food safety trainer.


He has trained over 1000 people in HACCP, its principles and applications, and has
also trained in ISO 9000, food product recall and food labelling. He has spoken at
over 50 food conferences, both in Australia and overseas on food safety and food
technology topics.


He has written or published over 30 papers including codes of practice or guidelines
for the small goods, cold chain; hospital catering and cook chill industries. He is a
Fellow of the Australian Institute of Food Science and Technology, and the
Association‟s past Public Officer. He represents Australia on an international union of
Food Science and Technology Committee and is the Public Officer of the Australian
Food Engineering Associations. He was a food safety advisor to the organising
committee for the 2000 Sydney Games.

Todd has extensive experience and expert knowledge of the food, hospitality, and

Todd was Executive Chef at many internationally recognised establishments
throughout the world before embarking on a teaching career in the NSW TAFE

He started his career as a Mechanical Engineer designing airport vehicles and heavy
goods vehicle accessories for a small UK manufacturer.


This product and quality management experience became essential after a career
change into retail Technology with Tesco. He stayed at Tesco for eight years working
in a wide range of Non-Foods Technical roles and eighteen months in a buying role
to gain commercial awareness and skills.


His next role was with Safeway, where he gave technical support to a commercial
expansion into non-food products. The last five years of his eight years with Safeway
was as Technical Controller. He managed a team of Technical Managers responsible
for the safety, quality and legality of all Non-food and Beers, Wines and Spirits
product categories.


During his time at Safeway he represented the company at the BRC as Chairman of
the working group that developed version 1 of the Consumer Products Standard.


He trained as a Lead assessor and has audited around the world in his retail days.


In 2004 he set up a consultancy company providing technical product support to
retailers, importers, certification bodies and a trade association.

John has over 40 years experience in the field of food safety and hygiene both in an
enforcement role and in the commercial environment and is currently Manager of the
ATP Scheme.


In addition to having expert knowledge of the European food industry he has worked
extensively outside Europe in particular in South America, the Middle and Far East
and USA and has designed factories and production layouts all over the world.


Training has always been his “first love” and he is registered for the delivery of CIEH
food safety courses at all levels and has organised and conducted numerous
seminars on Food Safety & HACCP in Europe, Central America and SE Asia. He is a
Fellow and former Chairman of the Society of Food Hygiene Technology, a Fellow of
the Royal Society of Health and a member of the Chartered Institute of

Bill 58 lives with his wife Anne and family in Leicestershire. He has been operating as
a freelance consultant and auditor for the past 9 years.


Bill specialises in BRC training, BRC auditing, customer supplier audits and advising
clients on UK animal welfare standards. Bill‟s consultancy work includes factory
design, layout and process flows with specific regard to high risk operating
procedures.


Prior to 1997 he was employed in senior management positions manufacturing short
life, high risk/care products for Bowyers, W A Turner and Northern Foods. His work
takes him too many parts of the world from Tromsø in northern Norway to Thailand

Colin has over 40 years experience in the Hospitality and Food industries in
operational roles and in purchasing functions of major groups and brings a wealth of

As a Purchasing Executive for a number of major groups, he audited both potential

Franz is a Food Engineer working for ProCert Safety AG in Bern, Switzerland and

Jörg is a veterinarian. He has spent his professional career from farm to fork as a
food hygienist. He started as technical manager in the animal feed industry,
continued as a meat inspector and manager of a governmental veterinary laboratory
for meat microbiology. In his next step he introduced food hygiene and hygiene
training for Swiss army kitchens and cooks.


For the following ten years he worked for a retailer as a supplier auditor where he
was in charge of the development of a Salmonella eradication program for poultry
and egg production as well as the implementation and training of HACCP. In the
following years he was management representative in the QA department of the
biggest meat producer of Switzerland.


Today he is product manager at the certification body SwissTS Technical Services
Inc. He is a lead auditor for ISO 9001:2000, ISO 22000:2005, BRC and IFS as well

Reinhard was born in Vienna in 1953 and graduated in Textile Chemistry. He holds a
Dipl. Ing from the Agricultural University of Vienna in Food Fermentation Technology


His business career has seen positions in Unilever Austria involved in the production
of deep frozen food, ready made dishes, fruits, vegetables, fish, dough and bakery
products. At Felix Austria where he had experience in ready made dishes – sterilized,
sour vegetables, ketchup, mayonnaise, jams, fancy food, salads, fruits and
vegetables. He also has expert knowledge of dry and wet pet food production gained
in companies in Austria, Germany and Liechtenstein. He has his own consultancy
company and undertakes consulting for ISO 9000 and food safety standards, for
BRC/IoP Packaging Standard. He is an auditor for ÖQS, SQS and DQS for food
safety standards, ISO 9001, HACCP and has been a BRC Auditor since 2003 for
food and packaging.

Stefano Cardinali is Global Technical Manager in the Det Norske Veritas' BA
Certification Food, where he has been employed since 1998. He is BRC, BRC/IOP,
HACCP, FPA-SAFE, IFS, ISO 9001:2000, ISO 22000:2005 qualified Auditor, and
carried out about 800 audits.
He is a Food Engineer (PhD in applied microbiology). After an experience as
University researcher he was director of a private laboratory and consultant for
