Crab Cakes
(or Chicken Cakes)
Ingredients:
2 slices of bread
small amount of milk (to moisten bread)
1 egg, beaten
1 lb crab meat (no shells)*
1 T mayo
1 T Worchestershire
1 T parsley
1 T baking powder
1 T Old Bay Seasoning
Seasonings (just a very small amount of salt and pepper)
*chicken can be substituted for crab meat: brown chicken pieces,
cover and steam to moisten it up, then pull it apart in shreds
Instructions:
In large bowl, break bread into pieces
Add just enough milk to moisten the bread
Add all other ingredients
Shape into cakes (thick burgers)
Cook:
In large fry pan until golden brown (can broil if prefer)
