                           GAP/GHP Certification
Good Agricultural Practices (GAP) and Good Handling Practices (GHP)

The goal of GAPs and GHPs is to reduce microbial risks to fresh fruits and vegetables.
There is no way to guarantee that everything we grow and consume is free of harmful
microbial contamination, but the risk can be reduced if preventative steps are taken before
produce leaves the farm. These steps include the following:

Pre-Plant:
   1.   Select produce fields carefully
   2.   Store manure
   3.   Timely applications when incorporating manure
   4.   Choose crops carefully

Production:
   1.   Do NOT side-dress with manure
   2.   Exclude animals
   3.   Promote worker hygiene in the field
   4.   Test irrigation water quality
   5.   Select proper irrigation method

Harvest:
   1.   Clean harvest aids
   2.   Handle produce carefully during harvest
   3.   Promote cleanliness at U-pick
   4.   Keep produce cool

Post-Harvest Handling
   1.   Promote worker hygiene and health
   2.   Monitor wash water quality
   3.   Sanitize packing house
   4.   Clean transportation and refrigeration

The purpose of the Federal-State Inspection Service’s Audit Verification Program is to
demonstrate that the participating company was adhering to generally recognized Good
Agricultural and Good Handling Practices when the audit was performed. It is a voluntary
program established to attest the participant’s adherence to the Food and Drug
Administration’s “Guide to Minimize Microbial Food Safety Hazards for Fresh Fruits and
Vegetables.”

As an incentive for more farmers and handlers to participate, the Maryland Department of
Agriculture has a cost-share program to help with the process. For funds to be awarded,
the audit must be approved and payment verified. Audits are offered through the MDA’s
Food Quality Assurance Program through a cooperative agreement with the USDA
Agricultural Marketing Service.

Description:                   Arnold Farms is a 350 acre produce farm on the Eastern
                               Shore of MD. We are capable of shipping tractor trailer
                               loads and are interested in delivering to the warehouse.
                               We start with leaf lettuce in May. We grow quantities of

                            M. Clayton Company packages and ships approximately
                            30,000 pounds of crabs and crabmeat each day during

Description:                    The Healthy Food in Health Care initiative at Maryland
                                Hospitals for a Healthy Environment works with hospital
                                food service directors and chefs throughout Maryland to
                                connect them with growers and producers of local and
                                sustainably produced foods, and to implement
                                environmentally sustainable initiatives. This program is
                                part of a national campaign by Health Care Without
                                Harm (www.noharm.org), and part of a larger initiative to
                                "green" hospitals on every level
                                (www.practicegreenhealth.org). Maryland is the leading
                                state in the country with over 25 hospitals implementing
                                greening initiatives through multidisciplinary Green
                                Teams. There are now 10 health care facilities in
                                Maryland and 151 around the country that have signed
                                the Healthy Food in Health Care Pledge, making a public
                                commitment to provide increasingly more local,
                                sustainably produced foods at their facilities
                                (www.noharm.org/us/food/pledge). This is a grant
                                funded program through the University of Maryland
                                School of Nursing, funded by the Association of
                                Baltimore Area Grantmakers and the USDA’s Federal
                                State Marketing Improvement Program.
