Constance Lemuria Resort, Seychelles. 5 Star resort situated on the Island of Praslin in the Seychelles Archipelago. 96 suites, 9 De Luxe Villas including a presidential villa equipped with private swimming pools and offering butler service, 3 restaurants and a championship golf course. The clientele base if mainly European and the resort enjoys an average annual occupancy rate of 70%. The resort currently has a staffing of 425, 50% of which are expatriates of 12 different nationalities. The management and staff of the resort are currently engaged in a Total Continuous Improvement programme and has introduced its first work improvement teams in July 2006. Part of the Hotels Constance, a group based in Mauritius and specialised in luxury and niche hotels. The group manages luxury hotels and lodges in Mauritius, Seychelles, Madagascar and Maldives.. Sous Chef for the Buffet Restaurant (Italian / Mediterranean cuisine) Reports to: Executive Chef, Executive Sous Chef The job of Sous Chef consists of: - Being responsible of the main restaurant and ensuring great food is served on the buffets (Breakfast, lunch and dinner) - Ensuring that guest satisfaction levels are reached and enhanced - Planning and costing of daily buffets - Supervision and Training of all kitchen staff in their daily duties.

Professional qualifications:
Higher National Diploma in Culinary Management from a reputable institution or equivalent. Excellent track record in the culinary field with preference to a mix of quality from Luxury five star resort operations. Must have a proven track record in managing, motivating and training his team. Should testify to sound culinary education and training and appropriate training to supervisory and management functions.
