The Radisson Plaza Hotel Sydney is offering a great educational opportunity to
Year 12 hospitality students known as the High Flyers Program.

The High Flyers Program offers the chance

    for Food & Beverage students to win a hospitality scholarship with Kenvale
    College of Hospitality and Tourism Management

    OR
     for the Kitchen students to win a full Kitchen Apprenticeship with the
     Radisson Plaza Hotel Sydney’s award winning Kitchen Team and renowned
     Chef, Jeremy Clark.

                         Welcome To The High Flyers Program

                         In partnership with the Federal Government’s Career’s Advice
                         Australia initiative, the NSW Business Chamber, the North West
                         Business and Education Network and Kenvale College of Tourism
                         and Hospitality Management, the Radisson Plaza Hotel Sydney is
                         offering a great educational opportunity to Year 12 hospitality
                         students known as The High Flyers Program.


                         What Is The Program?

                         The High Flyers Program offers the chance for Food and Beverage
                         students to win either a hospitality scholarship with Kenvale College
                         of Hospitality and Tourism Management and for the Kitchen students
                         to win a full Kitchen Apprenticeship with the Radisson Plaza Hotel
                         Sydney.



                         How To Win The Scholarship

                         Students are eligible to apply for one of 15 selection places.

                         Those 15 students will then compete against each other in the lead
                         up to and the presentation of a Gala Dinner. One student for each
                         prize will be chosen on the night by a team of industry judges and
                         will be awarded the major prize of a scholarship.

                         What Is Involved?

                         The 15 students selected will partner with the hotel operations team
                         and will be involved in three planning sessions for the hosting of the
                         Gala Dinner.

                         A total of 10 students will work with the hotels Food and Beverage
                         department to set up and serve the guests.

                         The five other students will work with the Kitchen team to prepare
                         and plate the three course Gala Dinner menu.

                         The student’s parents, teachers and industry representatives will be
                         the guests at the Gala Dinner.


                         What Is The Scholarship?

                         The winner of the F&B scholarship will be enrolled in Kenvale
                         College in a Diploma of Hospitality Management with their fees paid
                         courtesy of Radisson Plaza Hotel Sydney.

                         During the student’s studies they will also receive practical work
                         experience at the Radisson Plaza Hotel Sydney in their specialised
                         area of development.

                         The winner of the Kitchen scholarship will be signed to a full
                         apprenticeship in Radisson Plaza Hotel as an Apprentice Chef with
                         our award winning Kitchen team and renowned Chef, Jeremy Clark.

                         How Do Students Apply?

                         Students must submit an application detailing why they believe they
                         deserve the High Flyers scholarship. The submission may be in any
                         format eg written, video, power point. Students should utilise their
                         creativity and unique abilities to highlight their skills, attitude and
                         passion for the hospitality industry. An application form that will be
                         provided to the school must accompany the submission.


                         Dates And Times For Applications

                         Final Submissions Due: 7 March 2008


                         Applicant Phone Screening: 1 April – 4 April 2008


                         Final applicant interviewing by the hotel: 7 April – 11 April 2008


                         Successful applicants and schools notified: 28 April


                         Hotel Training Sessions commence : 12 May 2008

                         This session includes a hotel induction inclusive of a back of house hotel
                         tour, occupational health and safety policies, a hotel overview, banqueting
                         tour, room set up explanations and table set ups.

                         service techniques.

                         carrying three plates and the skill of carrying trays

                         Hotel Planning Session 1 – Monday 12 May 9.30am – 12.30pm
                         Briefing and Planning with Executive Chef
                         This session includes a hotel induction inclusive of a back of house hotel
                         tour, occupational health and safety policies and a hotel overview, also how
                         to plan a menu, food and dishes best suited to a three course plated
                         dinner, the menu for the Gala Dinner and allocation of tasks and roles for
                         the preparation.


                         Hotel Planning Session 2 – Monday 26 May 9.30am – 12.30pm
                         Mis En Place - Entrée and Dessert
                         This session includes the preparation of the cold entrée and dessert for the
                         Gala Dinner.


                         Hotel Planning Session 3 – Friday 30 May 2pm – 5pm
                         Mis En Place - Main Course
                         This session includes the preparation of the main course for the Gala
                         Dinner.


                         Gala Dinner - Saturday 31 May Time to be advised
                         Service
                         The Gala Dinner evening includes the cooking and serving of dinner and
                         kitchen pack down.
