                                                                                           Autumn Recipe

                                                                                           Wild Lime Sorbet
                                                                                           1 litre plain yoghurt
                                                                                           330g (1 & 1/2 cups) sugar
                                                                                           Finely grated rind and flesh/ juice of 8 wild limes (much
                                                                                           smaller than Tahitian or West Indian – you can substitute
                                                                                           just two of these)
                                                                                           2 egg whites

                                                                                           Combine yoghurt, sugar, and lime and mix until sugar
                                                                                           dissolves. Pour into tray cover and freeze until mixture
                                                                                           starts to set around the outside (about one hour). Beat
                                                                                           the egg whites until soft peaks form and fold into yoghurt
