the perfect pour requires three steps, and each one is
essential to the beer tasting its best. your bartender first
rinses the glass in cold filtered water to ensure the cleanest
possible pour. the tap handle is quickly opened to start the
flow of beer into the glass, which is held at an angle to allow
the beer to flow smoothly and to create the collar or "head"
of the beer. the collar is essential to opening up the
