Aloe

Aloe leaves are used to treat burns and rash. Aloe vera is a perennial plant with yellow flowers and it’s tough, fleshy, spearlike leaves can grow up to 20" long. Only the leaves are used for medicine. The clear, thick gel found in the inner part of the leaf is commonly used for minor cuts and burns. The bitter yellow juice found between the gel and the outer skin of the leaf is dried and used for laxative and other purposes.

ANISE-HYSSOP

The long spikes of purple and blue flowers last well into the summer. Anise-Hyssop will self sow. The foliage has a pleasant mint-like scent and the leaves may be used fresh or dried to flavor tea, cakes, breads, meat and poultry.

Medicinal Culinary Plant



Attractive to bees and hummingbirds, plants flower All-America in July and August. Monarda didyma is famous as Selection the source of “Oswego Tea”, named after an area of New York near Lake Ontario, where it grew abundantly. Leaves are infused as tea, and give the Earl Grey tea flavor to these drinks. Average height of plant in Minnesota (Zone 3-4)

Greek Mini stays compact and uniform without pruning. Tiny leaves are fragrant and tasty. It grows well in pots on the deck or patio. Greek Mini basil needs good drainage.

Magical Michael is a uniform basil with rich oils, aroma and the flavor of sweet basil. It has dark green leaves producing interesting compact purple and white flowers.



Thai basil is more vigorous and weather resistant than most lemon basil varieties.

A basil with deeply crinkled leaves and a sweet rich flavor when added to pasta, rice and sauces. We use the large leaves of this basil instead of lettuce on BLT sandwiches since one leaf will measure at least 4" long.



A small shrub that should be grown in a pot during the summer and brought indoors for the winter. It does very well indoors. This is the bay that is used in cooking soups and stews.

A very robust looking plant with large edible leaves and thick stems. Use fresh in Thai green curries and Vietnamese noodle soups.



Bergamot is attractive to bees and hummingbirds with the plants flowering in July and August. The flowers are a focal point in the garden when in bloom in mid-summer. Bergamot was once widely used by native Americans. It was introduced to the early colonists by the Oswego Indians and Oswego tea was made by colonists during the time of the Boston Tea Party. The pink, red and white flowers smell pleasantly of oranges. They are a nice addition to the flower border. A small handful of fresh leaves in 8 ounces of boiling water make a refreshing and relaxing tea.

This introduction is a beautiful yellow buddleia. The cream-yellow buds open to yellow flowers with a deep orange eye. Flowers are large, fragrant and quite prolific.



An annual bergamot grown for its pink and white spotted flowers with lemon-scented foliage. Lemon bergamot is from the southwestern United States, where the leaves are used in teas. It is a favorite attraction for the hummingbirds and bees.

Grow Borage in a well-drained soil in full sun.



Flowers are large and bright orange. It is heavy with petals and has both dark and light centers. A European variety bred for medicinal use. Its large flowers are rich in carotenoids and resin. Excellent for salves, tinctures and oils. The petals were used to color butter and cheese; it was also added to salads. At one time it was used as a substitute for the costly saffron.

A compact shrub with foliage that is silvery green. Leaves are aromatic with small blue flowers. If mulched in early November, it is hardy in Minnesota and colder climates. The lavender-blue flowers are produced abundantly in late summer, providing a vivid splash of color late in the season.

A small ornamental form with lavender-blue flowers and graywhite leaves. Use as a ground cover or in rock gardens. This popular ornamental has less effect on cats and has no medicinal properties.



Garlic chives have stiff leaves, flat and strap-shaped. Season foods with its mild garlic flavor.

Dainty is compact and very showy in spring.



A perennial from Europe, catnip has naturalized in many parts of the United States. Catnip has a bitter, camphor-like fragrance. Cats are attracted by the odor either fresh or dried. It has fuzzy heart shaped leaves up to 2" long. Its main use is for tea as a sedative.

German chamomile has a sweet apple scent that makes a nice tea.



Call it cilantro, coriander or Chinese parsley, it is commonly grown for fresh leaves. The plants form a low rosette of leaves then stalks of small white flowers.

Chervil has an anise flavor. It is a shadeloving, cool season herb used fresh in salads, omelettes and herb butter. Plants will self sow for a fall and spring crop.

A mixture of pink, red and white double flowers. It was mainly used as a flavoring for beverages, liqueurs, wine cups and vinegar. The fresh flowers garnish soups, stews, salads and sandwiches.



Cuphea (Batwing Plant) is a multi-flowering plant that keeps blooming until frost. It prefers full sun. Last summer we planted Cuphea and it grows nicely in containers and blooms all summer. Hummingbirds are attracted to the rich nectar in the flowers.

Large rapid growing plant that will grow almost anywhere in sun or shade. Comfrey is deep-rooted. Used externally as a poultice, since the leaves contain a compound that heals bruises and wounds.

The color is close to red in strong light with small pinkish purple flowers sitting on the tips of sturdy stems and green foliage. It is drought tolerant and does not like wet soil. Pinch tips back to produce a bushier plant.

Highly regarded medicinal herb used in strengthening the immune system. The purple coneflower is an attractive herb with rich reddish-purple flowers in late summer.



This dwarf, very compact dill requires no staking in the garden and will not topple over, making it perfect for patio containers. The plants will flower later, allowing for an extended ornamental period. ‘Fernleaf’ can also be used for recipes calling for dill in cooking.

Alaska is a bush type of nasturtium with variegated leaves. Brilliant colored single 2" flowers in yellow, crimson, orange, salmon and cherry cover the plants in summer. Grows well in containers; flowers are deliciously edible.



A favorite for mint jelly, sauce and tea. Jim selected this old fashioned variety of spearmint. The flavor is mild and delicious in tea, fruit salad dressing, desserts, mint juleps.

This relative to the catnip produces 1" long pale blue blossoms on upright stems and attracts hummingbirds to the garden. Leaves are gray-green, pointed and large.



This small growing oregano is excellent in pizza, tomato sauces, herb blends, meats, shellfish and eggplant dishes. Greek Oregano has a distinct, pungent aroma and flavor. Leaves are slightly hairy with white flowers.

Growing & Using Rosemary

Rosemary is one of the most fragrant herbs, lending its flavor to almost any food. It can be used fresh or dried, keeping in mind that less should be used when it is dried. Many are grown for their plant habit and flower color. To bring rosemary indoors in northern climates it is best to grow it in a pot outside in the summer and then bring indoors for the cold months. Plants should be repotted at least once or twice a year to maintain new growth. Keep in a south or west window and water plants when dry. It is important not to overwater and to maintain good air circulation around the plant.

TOMATOES

Tomato Information

Determinate varieties of tomatoes are bred to grow to a height of around 4'. They stop growing when fruit sets on the terminal or top bud ripen their entire crop around the same time and then die. They may need a limited amount of staking but should not be pruned as it severely reduces the crop. Indeterminate tomatoes will grow and produce fruits until killed by frost and can reach heights of 6 feet. They will bloom, set new fruit and ripen fruit all at the same time throughout the growing season. They may require staking for support and have less mature fruit at one time.

Fruits weigh 1 lb. with excellent flavor. The history of this prolific plant goes back to 1922. Seed was sent to Australia in the 1930’s and is grown today. Several varieties of Mortgage Lifter are grown but there seems to be little difference in taste.



Old German has yellow fruit on this heirloom variety and is shaded inside the fruit with a reddish-pink stripe. The interior is yellow, marbled with red. The flavor is outstanding.

An heirloom tomato, Moskvich is from the city of Kaluga in Western Russia. It ripens ahead of all varieties producing a medium sized red tomato with smooth texture and rich taste. An excellent variety for cold climates.



4 cups fresh basil leaves 1 cup pine nuts 1/2 - 3/4 cup extra virgin olive oil 1 cup grated Parmesan cheese 2 cloves garlic 1 tsp fresh lemon juice In food processor, puree the basil with pine nuts, oil, Parmesan cheese, garlic and lemon juice. Pack in a glass jar and store in refrigerator for 1 week or freeze in freezer plastic bags. Serve with fresh tomatoes and pasta.
