									•                   WHITE BEAN AND
                    TORTELLINI SOUP
                 For a quick, very tasty soup, try this recipe.
    Y2 cup chopped green bell             1   (1S-ounce) can great
        pepper                                 Northern beans, drained
    Vz cup chopped celery                      and rinsed
    Y2 teaspoon minced garlic             1Y2 cups chopped tomatoes
    8 cups canned fat-free                1 teaspoon dried oregano
        chicken broth                          leaves
    1 (6-ounce) package tri-              1 teaspoon dried basil leaves
        colored tortellini                Salt and pepper to taste

    In a large pot coated with nonstick cooking spray, saute the green
    pepper, celery, and garlic until tender, about 5 to 7 minutes. Add
    chicken broth and bring to a boil. Add tortellini, reduce heat and cook
    15 minutes or until tortellini is done. Add beans, tomatoes, oregano,
    basil, and salt and pepper. Continue cooking 5 minutes longer.
