Menu:

  •   Tiraditos and Ceviches:
      King fish tiradito in two oils - Fine slices of king fish cured in Pisco for 12
      hours, dressed with Peruvian red pepper (rocoto) and basil oil
      Peruvian Snapper ceviche – A traditional ceviche that takes us back to the
      basics of Peruvian seafood cuisine, small dices of fresh pink snapper gently
      cooked in lime juice
      Yellow fin tuna tiradito in celery emulsion - Fine slices of yellow fin tuna in
      a smooth celery and aromatic herbs emulsion
      All served with watercress salad and caramelized dices of sweet
      potatoes


  •   Quinua, broad bean & butternut pumpkin risotto with king prawns in a
      salsa verde (mix of aromatic Peruvian herbs)


  •   Pan fried quail breast, ricotta tortellini with aromas from Lima


  •   Lima bean mortar puree (lima bean causa) topped with smoked duck
      breast in an escabeche style from the north coast


  •   Peruvian dessert degustation:
      Lucuma mil hojas – Thin layers of Peruvian Lucuma caramel with hojaldre
      pastry
      Picarones topped with orange and cinnamon syrup - Pumpkin and sweet
      potatoes profiteroles
      Peruvian purple corn and cinnamon mousse with pineapple in a light
      purple corn coulis
