    Lower temperature & careful timing- so it is not too
     tough
    MUST cook poultry to well-done stage


How can you test poultry for doneness?
Meat thermometer is only accurate way to test for doneness.
When testing a whole bird inset the thermometer into the
thickest part of the thigh – it should not touch bone and
should reach 180ºF & breast meat should reach 170ºF- due
to the uneven shape of whole poultry – you should check
temperature in several places.

Methods of cooking:
    Roasting
    Broiling
    Grilling
    Frying
    Oven-frying (baking)
    Braising- brown individual pieces in a small amount of fat
    Stewing
    Microwaving
