Recurring food scandals, however, are putting consumer’s confidence to the test again and again. To counteract this loss of confidence in this respect, the European Union felt the need to establish a set of rules, in which not only the general principles and requirements of the food law but also adequate methods for food safety are stipulated. Since the quality of the end product is hardly separable from the quality of the raw materials used, an ‘integrated concept’ for food safety is pursued.
