					                        Fish Pie
Ingredients
                                                     Serves 4
675g / 1½lb potatoes cut into bite size
pieces
325ml / 11 floz milk
50g / 2oz strong hard cheese, grated
100g / 4oz button mushrooms, sliced
225g / 8oz frozen mixed veg
450g / 1lb white or smoked fish fillet or
mix of white, smoked and tinned fish, e.g.
tuna, salmon, mackerel or cod or smoked
haddock
2 tbsp chopped parsley
3 tbsp cornflour
Salt and pepper


Method
1. Cook the potatoes in boiling water, drain and mash with 1½ tbsp of
   milk and half the cheese.
2. Put the mushrooms in a pan with the vegetables, fresh fish and half a
   pint of milk. Season with pepper, bring to the boil and simmer for 8
   -10 minutes until the fish and vegetables are cooked.
3. Carefully lift the fish out, remove the skin and bones, flake the
   flesh.
4. Blend the corn flour with the remaining milk, stir into the saucepan
   with the parsley, bring to the boil and simmer for two minutes until
   thick.
5. Stir the fish into the sauce. (If using tinned tuna, salmon or
   mackerel, add at this stage). Place in an ovenproof dish.
6. Top with the mashed potato and sprinkle with the remaining cheese.
   Grill for about five minutes until golden brown and piping hot.
