Welcome to the June Edition of the Raphael’s Newsletter. In this edition we will be telling you
about our delicious new winter menu and some exciting functions that we have coming up on
our calendar.

New Menu
Raphael’s are very excited to announce a brand new winter menu. Our new menu will tempt
your tastebuds and warm your heart with its combination of traditional yet unique Australian
meals comprising the most tender and succulent Australian meats. It will bring back memo-
ries of Sunday lunch at Grandma’s house.

Some of the more intriguing and mouth watering main meals on our new menu are the
Kangaroo on potato rosti, Veal Medallion, Rack of Lamb and the ever popular Steak and Kid-
ney Pie. Of course old favourites, Chicken Raphael and Barramundi, are still featured on the
current menu.

The oysters and entrée menu have also had a winter makeover. Grandma’s kitchen is calling
yet again with the inclusion of Devilled Lambs Kidneys, Pan Fried Calves Liver and Grilled
Scallops and Prawn Skewers. Whether you are a hearty meat eater, a seafood lover or a
vegetarian, we have Entrees and Meals to suit you.

You may also notice that our new menu has another slight change in that we now list a
recommended wine accompaniment beside each meal or dessert. Wonderful Tyrrell’s Lost
Block Merlot, Sirromet’s 820 Pinot Gris and Petaluma Riesling are just three of the special
wines featured on our menu. However, this serves as a guide only. Please refer to our wine
list to view our extensive range.

Introducing New Staff                 Kemara Whareaitu – Sous Chef

Raphael’s are proud to introduce another Kiwi chef to our team. Kem Whareaitu became a
Chef in 2003 after 20 years of working in an office for various Government Departments in
New Zealand. He began his new career at the prestigious Millennium Hotel in Rotorua in the
heart of New Zealand’s tourism industry. The Millennium is the largest deluxe hotel in Roto-
rua and is situated in the heart of the city next to the Polynesian Spa and Government Gar-
dens.

Kem only moved to Australia in December 2007 and we were the first to really nab him when
he began working at Raphael’s Café in February of this year. Due to recent staff rotation Kem
has now been recruited as Sous Chef for Raphael’s Restaurant.

Shawn and Kem make an ‘All Black’ and dedicated combination of Chefs. Their talents and
personalities combined are already proving to be a formidable team in the Restaurant
kitchen. They will continue to create delicious and distinct Australian meals, possibly with a
Kiwi twist?

Kem is a passionate supporter of all things football and let me assure you there is no green
or gold on his heart. Whilst an all New Zealand kitchen might prove to be challenging for us
Aussies during such times as the Bledisloe Cup, we can at least guarantee the quality of
meals will remain at the highest standard.

Winemaker’s Dinner—Thursday 3rd July

Come join us for a fabulous night of quality food and wine. Tyrrell’s Winery and Raphael’s
Restaurant are combining talents for this Winemaker’s Dinner. Raphael’s will be providing
canapes on arrival along with a delicious 3 course meal. Tyrrell’s will be showcasing four
fabulous wines. Guest speaker for the evening will be Chris Tyrrell.

Chris is the fifth generation of the Tyrrell winemaking family dynasty. Growing up on the
vineyard, Chris has been involved with wine for as long as he can remember. You could say
Chris has wine in his blood. Chris’ first vintage was in 2001 and after studying Wine Science,
he travelled extensively, spending time and working in some of the world’s great
wineries in Burgundy, Rhone, Bordeaux and Spain. Now 25, Chris is a director and assistant
winemaker at Tyrrell’s under chief winemaker Andrew Spinaze and red winemaker Mark
Richardson. He is ensuring that the family winemaking legend continues for one of the
world’s great wine families.

DATE CLAIMER—Theatre Restaurant— Tuesday 17th July

Last year we successfully launched the first of our Theatre Restaurant productions by the
Michael Weston Organisation.

Once again we bring you two short plays that will have you in stiches: The Stepmother by
Arnold Bennett and Abandoned Shorts, a series of comedy sketches. These plays feature
Ben Rose with Chris Chambers, Alex Lanham, Michelle Atkinson, Kate Leahy, Ryan Ver-
bruggen and Frances Marrington.

The plays will, of course, be accompanied by a delicious 3 course meal prepared by our
Head Chef, Shawn Johnston.
