					                               Cream of Asparagus and Crab Soup

2 1/2 sticks butter
1 cup fine diced onions
1/2 cup fine diced celery
1 teaspoon Italian seasoning
1 tablespoon cracked black pepper
1 1/4 cups all-purpose flour
2 1/2 quarts chicken stock
3 pounds fresh asparagus (cut in bite-sized pieces reserving the tips and discarding 1-inch from
the stem)
1 cup heavy cream
2 pounds jumbo lump crabmeat

In large stock pot over medium-high heat, add butter, onions, celery, Italian seasoning, and black
pepper. Stir until translucent, then add flour and continue to stir creating a roux. Add chicken
stock, and whisk until smooth. Add all but the tips of the asparagus pieces, and continue to stir.
Reduce heat to medium-low and let mixture continue to cook until asparagus are tender. Once
asparagus is tender and soup is smooth, turn off heat, add heavy cream, and stir. Fold in
asparagus tips and crabmeat. Ladle into serving bowls and enjoy.

                Grilled Halibut with Rosemary and Sun-Dried Tomato Butter

1 1/2 tablespoons cracked black pepper
1 tablespoon kosher salt
1 tablespoon smoked paprika
4 (6 to 8-ounce) boneless skinless halibut fillets
4 ounces melted butter

Sun-Dried Tomato and Rosemary Butter:
8 ounces unsalted butter, softened
1 tablespoon chopped fresh garlic
1 1/2 teaspoons chopped fresh rosemary leaves
1 tablespoon chopped marinated sun-dried tomatoes
1/2 teaspoon chicken bouillon powder
1/4 teaspoon coarsely cracked black pepper

Preheat oven to 375 degrees F.

In small bowl mix black pepper, salt, and paprika. Sprinkle seasoning evenly on each side of the
halibut fillets. In large saute pan, pour in melted butter and heat on medium-high heat. Sear the
halibut on all sides until skin is crisp, about 1 1/2 to 2 minutes on each side. Remove pan from
heat and place in the oven for 4 to 6 minutes. Remove from oven and transfer to a serving platter.
Let fish rest for 4 to 5 minutes, then put 1 tablespoon of Rosemary Sun-Dried Tomato Butter on
each piece of fish and serve.

Sun-Dried Tomato and Rosemary Butter:
In small bowl mix all ingredients with spoon until blended and set aside in cool place or wrap
and place in refrigerator until cool.

Yield: approximately 1 cup

               Grilled Chicken Sandwich with Goat Cheese and Date Spread

1 1/2 teaspoons kosher salt
1 tablespoon cracked black pepper
1 tablespoon chopped fresh garlic
1 to 2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
4 (4 to 6-ounce) chicken breasts, pounded thin
1 1/2 cups fresh baby spinach
1 cup roasted peppers, cut in thin strips
8 thick-slices multigrain bread, toasted

Goat Cheese Date Spread:
1/2 cup softened goat cheese
1/4 cup finely diced pitted dates
2 tablespoons finely diced scallions
1/2 teaspoon cracked black pepper
1 tablespoon extra-virgin olive oil

In medium bowl mix salt, pepper, garlic, lemon juice and olive oil, then add the chicken
breasts and marinate for 20 minutes, at room temperature and up to 4 hours, refrigerated.

Preheat an indoor grill (recommended: George Forman grill).
Grill chicken until cooked through, about 4 to 6 minutes on high. Remove chicken from the grill
to a large plate and let rest.

Goat Cheese Date Spread:
Meanwhile, in small bowl mix all ingredients together until fully incorporated.

Coat 4 slices of toasted bread with an even amount of spread, then equal amounts of spinach,
then roasted peppers and chicken breast. Coat the remaining 4 slices of bread with the spread and
cover the sandwiches. Slice on an angle, dig in and enjoy.
