                               Recreational Cooking Classes Winter 2007
                                Our selection of Culinary Classes for you to enjoy.
         Our recreational classes do not require any prior experience, we just ask that you have a Passion
                               for Food and like to have fun and meet new people!
            You can sign up for as many or as few classes as you like! Our classes are all less than 15
         participants and are all hands on! You will get to enjoy whatever creation you make. So bring a
                                             friend and come hungry!

         Soups and Stock                                                     Tuesday January 23
         A great follow-up to last weeks Sauces 101. A great soup begins with a great stock
         derived from a mirepoix of aromatic vegetables. In this class we will not only explain a
         “Mirepoix”, but we will give you the knowledge to enhance any of your own recipes.
         Homemade soups can warm the soul on these cold winter days. Learn the basics that
         have created the recipes that have been passed from generation to generation. Chef will
         also discuss how to keep your soups heart healthy while not sacrificing quality.

         Flambé 101                                                           Tuesday January 30
         For this event, you had better come hungry and ready to learn the impressive
         techniques of the art of Flambé!
         After this evening, you will be able to prepare a gourmet dinner that will impress your
         guests and satisfy their palettes! We will be showing you the traditional French dish
         “Steak Diane” Flambéed tableside. We will also show you Bananas Flambé and finish
         with a piping hot Flambéed Coffee.
         Due to the higher cost of Materials, this course has an additional Course Fee of 25.00.

         Guys Night Out                                                        Tuesday February 6
         Sorry ladies, this one is just for the guys, but we’re sure you will reap the rewards!
         She will be amazed at your talents, and you will be amazed at how easy and fun it can
         be! We will be teaching you to prepare a complete menu (and of course giving you
         cheat notes to take home!)
         Southwestern Sunset Salad                          Rosemary Baby Potatoes
         Boneless Breast of Chicken stuffed with            Fresh baked Bread with herbed Butter
         Chevre and Sundried tomatoes                       Strawberry Crepes

         Celebrity Chef Night                                        Tuesday February 13th
         This will kick off our celebrity chef series, once a month we will have one of Barrie's
         fabulous chefs come in and show you their secrets and teach you one of their favorite
         recipes. Each Month will be a different chef from a different restaurant. Tell your
         favorite chef to sign up for a night!

         Couples Date Night                                            Saturday February 17th
         No matter if you are just dating or have been married for years, here is the chance for a
         fun evening to try out some new recipes and have a nice dinner with your “better half”
         to celebrate Valentines Day. Our evening will start with our chef helping you to prepare
         a gourmet dinner for 2, you’ll both have to work at this, but we will take care of the
         clean-up!
         After your meal comes together, you will set your table, light the candles and enjoy!
         Each evening there will be 2 choices of menus

         Pasta Workshop                                            Tuesday February 20
         Discover the pleasure of fresh, simple to make, Handmade Pasta! You will learn how to
         change Flour and Eggs into the most flavourful pasta you have ever had! We will also
         show you some traditional sauces and Garnishes before we dine as though we were in
         Italy!

         Hors D’oeuvres and Nibbles                                       Thursday February 22
         This class will take through some basic party planning tips and a hands-on night of
         creating some delectable Hors Oeuvres’ that you and your guests will enjoy.
         This class will always feature vegetarian, seafood, beef & chicken selection.
         Of course we will get to enjoy all of the creations at the end of the evening!

         Home Cheesemaking                                                                         Saturday February 24
         Do you love Cheese? Do you want to try every new cheese you find?
         Cheese making is an ancient art that has been passed down from generation to generation;
         recently this art has almost disappeared.
         Here is your chance to keep the tradition alive. And have some fun while doing it.
         Our one-day workshop will teach you all the basics of home cheese making.
         We will simplify the process and have you making an array of cheeses in no time.
         At our workshop, you will learn to make A Creamy Canadian Camembert, Traditional Italian
         Mozzarella, Farmhouse Cheddar,
         and a great smoked Gouda.
         You will make new friends who share similar interest in home dairying and you will learn how
         to make additive-free cheeses, which can be low in cholesterol, calories and salt for a fraction of
         the cost of store-bought cheeses. The workshop starts at 10:00 am and run through 4:00 PM.
         Included is a fabulous lunch of Artisan cheeses made in Ontario and Quebec with a Traditional
         Quebec Tortiere
         This one-day workshop has a fee of 275.00

         Chicken & Beef – The Basics                              Tuesday February 27
         In this course, learn the basics of these versatile and delicious staples. In this class we
         will teach you about the various cooking methods and which is best suited to which cut.
         You will also learn about safe handling & how to utilize less costly cuts. Included is a
         selection of chef tested recipes for you to try at home.

         Cake Decorating                                                    Thursday March 1
         This is the class if you enjoy giving your baking creations that professional look. Our
         Pastry Chef will take you through all the basics of decorating and few tips that only
         experience would give you.

         A Night in Thailand                                           Tuesday March 6, 2007
         Learn this unique style of cooking and experiment with the flavours and seasonings
         used in your favorite Thai restaurant. Thai food has a long exotic and spicy history; our
         chef will teach you some of the culture and how to prepare an exotic Thai Dinner in
         your own kitchen!

         Spanish Tapas                                                     Thursday March 8
         If you enjoy Hors D’oeuvres and Finger foods, come and learn the Spanish art of Tapas!
         Chef Let our Special Spanish Chef guide you through all the steps to add that
         Mediterranean flare to your next dinner

         An evening of Cheese and Wine Tasting                              Tuesday March 20
         This fabulous evening of tasting and learning is hosted by Willow Springs Winery, One
         of Ontario’s finest VQA Producers, hosting the most northern Vineyard in Ontario.
         Our evening will start some basics of Sommeliers as well as a brief description of the
         history of some of our cheeses. Our Sommelier and Fromager will lead your journey
         through the world of cheese and wines, explaining why each wine compliments the
         various cheeses .This gastronomic adventure will also let you know where you can
         purchase each of the wines and cheeses and give you a few internet sites to help further
         your appreciation for these two delights.

         Parent Child Classes                                                   Saturday March 24
         This great afternoon of fun, learning and spending some quality time with that budding
         chef in your home. These classes are separated into two age groups to accommodate all
         levels of cooks.
         Age 8 – 12 –10:00AM – 12:00
          In this class you will be learning how to make a traditional Italian Pizza from scratch as
         well as a great stuffed cookie recipe.                  Parent and 1 child – 75.00
         Age 13 – 17 – 2:30PM – 5:00
         In this class, we are going to make a wonderful Italian dinner, which most teens will be
         able to duplicate on their own. Please visit our website for a full menu description.

         Vegetarian Specialties                                             Tuesday March 27
         Let our Guest Vegetarian Chef treat you to some creations that you may not have tried.
         We encourage you to email any special requests to our chef and they will try and
         incorporate them into the evening.

         Culinary Basics & Knife Skills                                  Thursday March 29
         This class teaches you what is needed to get started in the kitchen and be successful. We
         will introduce some basic techniques and skills that will benefit you in future classes
         and for many years to come. When working in the kitchen, it is important to know that
         your hands are your most important tools; we will teach you how to work with the
         most common kitchen knives while learning to properly slice, dice, chop and gain
         confidence with your knives. We will also discuss basic cooking methods, seasonings,
         flavorings and seasonality of many ingredients.


         Asian Night                                                        Tuesday April 3
         Take your Asian night beyond the Stir Fry. Learn how to make a fabulous bamboo
         salad, a traditional Teriyaki Chicken or Beef and Some Asian noodles that will curl your
         Chopsticks.


         A taste of Italy                                                    Thursday April 5
         Learn the secrets of Italian Cooking with our chef. This class will be about all things
         Italian, except Pasta!

         6 Dinners in 2 hours
                                                                   Saturday April 7 10:00 – 2:00
         This is what you have been waiting for: We will set-up 6 stations for you to prepare
         your take home dinners for 4 to 6 guests while customizing them to your families tastes.
         This fun afternoon will have our chefs handy to answer any questions and help when
         needed. Of course our clean-up crew will look after the mess and make sure you can
         just enjoy your afternoon.
                                                              6 – 6 person entrees 175.00

                                                     Booking Information
         All of our classes are taught at our Downtown Barrie location in Historic 94 Dunlop Street West.
         All of our evening classes begin at 7:00 PM and range from 2 – 3 hours (depending on class
         size).
         Our largest class is 15 students, so please book early to avoid disappointment.
         Most classes are 75.00 (unless otherwise marked) with a book of 3 classes for 200.00. Our classes
         are non-refundable, however if you are unable to attend a class that you registered for, just give
         us 24 hours notice and you will be issued a credit for a future class.

         Gift Certificates
         Cooking classes make great gifts, you can purchase our certificates and the recipient can choose
         which class they attend
