Ruth’s Easy Fruit Slice 1 cup SR flour 1 teas mixed spice 1 cup sugar (can be raw sugar) 1 cup coconut 1½ cups mixed fruit 2 eggs 3 ozs (75g) butter or marg. Few drops vanilla Sift flour and spice into a bowl, stir in remaining dry ingredients, Beat eggs and vanilla and add. Melt marg and add. Add fruit and coconut. Press into greased and lined & X 11 tin. Bake evenly in a moderate oven 35 mins. Allow to cool. Cut into squares.
